Looks nice Kevin. Simple and tasty. I might add some chopped black olives and chopped green onions. Maybe some shredded lettuce also. Although I would need a big dinner plate under it because some of the ingredients would likely fall out.
I can imagine the weather being really humid over there. Hang in there, summer is almost over. Regarding the tacos: For the no cooking version I usually use pulled pork or chicken

@KumasKitchen sure! 1 rotisserie chicken (skinned and deboned), green grapes (halved or whole), pecans (chopped or halved), poppy seeds, honey, mayo, salt and pepper. As much as u think looks right on the last 4. Mix all and refrigerate or eat right away. Tastes great at room temp or chilled. I hope you enjoy it. My family has loved it for years. Will do. I drove a truck up to Tokyo and back a few days ago. Hit massive rains by Hamamatsu. Windshield wipers couldn't keep up. Was a crazy drive home that night.
