I tried this recipe tonight and it was amazing!! I don't usually use some of the seasonings in these combinations, but it turned out great! I didn't have fresh herbs so I used what I had, but I didn't use the bay leaf as I didn't have any. That being said it was really tasty! I served it over cauliflower rice. Thanks so much, you're such a great chef and so entertaining!

Yuuummmyy. This is one of my favorite dishes. My mom used to make it for us when we were kids. Of course we could not pronounce it, so we called it Beef George Jones. I would love to get water buffalo brisket, I bet it's awesome.

hahaha nope our water buffalo does a lot of work so it's a really tough cut of meat. It has no fat so it's really not as good as cows that don't work at all.

This is great cold weather food! One thing that might substitute for the texture of the potatoes is roasted radishes. I might add those in a half hour to 45 minutes before the end. Just as a texture contrast with the beef 🥩 and mushrooms 🍄

Any heavy bottom saucepan will do the job. I bought PRASUMA bacon cubes. You get them in all the major supermarket.

Great looking recipe. I also like your beef stroganoff recipe. I love these two dishes but I always had them with noodle. But they are great for Keto with mashed cauliflower. Have you ever tried making 'Fat Head' mozzarella gnocchi or other noodle alternative? I did see your Squid-oodles.

Headbanger's Kitchen after all that working I ATE IT! Omg it was soooo good and extremely tender! I was skeptical about the sour cream but oh!!! It was so yummy. This recipe looks incredible! How much sugar do you think the wine adds after it’s reduced down? For the non Keto version, I also used to used tomato paste to add a little acid and thicken the mixture, but for Keto purposes maybe some lemon or Apple cider vinegar plus some xanthan gum will suffice?

So if you are skipping the wine you can add the tomato paste and if you aren't too strict about carbs you can add tomato paste anyway, you might go up 2 net carbs in a serving. The wine I've added all 4 carbs from 1 cup of it, so it will vary but I don't think it will increase the carb/sugars by reducing it, you are only removing the water content from it.

The original recipe actually didnt have carrots or potatoes, just the mushrooms and onions, though pearl onions in Julia Childs recipe. I made the original pre-low carb days and omg, it is amazing. I look forward now to trying this one! Btw, i used to love to cook before the low carb change and like to find ways to adapt old recipes. One is stumping me, if you find a way to make Timpano keto PLEASE PASS IT ON!! ....please >.

Thanks bro but I don't think I ever want to start a restaurant in this country. Every corner you have to deal with government and bribe people and it's horrible. Plus money, it's damn expensive and also dealing with customers isn't my thing. But never say never.

How would it be to take a whole carrot and put it in, and remove the carrot entirely after its done cooking. That way it releases flavor into the stock. Would that also add carbs in the stock or would the carbs still be in the carrot?

So honestly there are lots of people who will eat a carrot on Keto because it's a vegetable and they eat a small amount of it. I doubt the carrot along will add anything to this dish unless you want to eat the carrot. There is such a meaty flavour anyway that the carrot will be lost when it comes to taste in the stock.I presume a large part of the carbs will remain in the carrot. It's too minuscule to consider even.

Xanthan gum is great! But, seriously. You need just a TINY amount. Like maybe half a teaspoon for a pot that big. Otherwise it'll turn to jelly.

I do normally, this recipe it will be cooking low and slow so it breaks down and becomes 1 with the sauce.

Crock pots are great at cooking things slowly over time to tenderize meats, but they don't concentrate flavors, because there's almost no evaporation, so your sauce is going to be thinner and more diluted.

You can have some red wine on Keto no issue. Alternative is just skip the wine completely. A slash of red wine vinegar will do.

Actually cattle beef is what's required for this recipe. In India, you don't get cattle beef in most places. It's mostly buffaloes

The only thing I'd change is leaving out the xanthan gum -- it shreds my gut horrendously. Stephen King level horrors that take about ten hours to torture me. I have since learned to use beef gelatin or even Knox gelatin (pork and beef) in recipes calling for gums. I prefer the beef. It's like velvet; so silky. It's like a truly decadent fine French brown sauce. For your recipe, I'd take a half cup of cold water or bone broth and sprinkle (sprinkle, not dump, cos it makes more lumps to be worked out) 2 Tablespoons of the gelatin powder into the liquid of choice. It must be cold; sprinkling real gelatin into hot liquid inactivates its thickening ability. That's called blooming the gelatin. It dissolves it so it can just melt flawlessly into the hot liquid it's added to. Mix well. Set it aside and go on with the preparation. At the point you'd add the xanthan gum, I'd add the bloomed gelatin, and continue with the recipe as is. CANNOT WAIT to try this!! I love Boef Bourginon!!! I grew up eating it, and honestly, the root vegetables were always my least favourite part anyway!😋

This is more like a beef stew- not quite a French style beef bourguignon, Non French beef stew recipes also use red wine. Interesting recipe and I am sure it will taste very good.

Beef bourguignon and can you tell me what would be different? I derived this from actual French recipes and apart from missing the potatoes and carrots I pretty much cooked it exactly the same way but if not I'd love to know what I'm doing wrong or what I'm not doing that makes this not French.

@@HeadbangersKitchen I don't think you did anything wrong, but I agree with Keto Meals and Recipes. I would not call this French cuisine because of the cayenne pepper. It's not a spice used in traditional French cooking, and adding it here will change the taste of the dish to something that is just not the French stew that many of us know so well. BUT, I still think your recipe is fantastic! I'd call it a recipe that is adapted, but not authentic.

I'm not a food chemist, but I think you drop a carb or two when you heat alcohol to higher than, what, 173F? Alcohol evaporates at that temperature when stirred, so only 20% remains. Anyhoo, looks tasty; I would suggest a clove or two of fresh garlic. Have a great day, Sahil.

Yeah I threw in some garlic and yeah perhaps but I counted all the carbs, either way many folks stop counting once it's more of a lifestyle.
