It looks good, I have been meaning to make a beer dough. I've bought some beer dough before in the market. What did you use to mix your dough?

Hi - thanks - I use a Panasonic Breadmaker - been using one for years and it kneads really well - very consistent.

Interesting I will try. Just a rem you say for dry yeast 0,6 to 2g depending on temperature. It s true that the quantity of yeast is linked to 2 things : temperature and time let to rise. If you fix a parameter the other one will be fixed too and one way to fix temperature is to make the rise in the fridge where the temperature is stable (at one or 2 degrés). It s longer but it permits to the flavour to develop. It s not by chance that good pizzaiolo used to have a 48 to 72 hours of fermentation … in the fridge. If you never tried it , test it you will never go back … except when you are in a hurry and decide at 2pm that you ABSOLUTELY WANT A PIZZA at 8pm… but adults are usually programmed to be reasonnable … at 95% ;))).

Thanks so much that's very helpful! I normally do a room and fridge proof, as you say, it's just the timing that can fall out of kilter and so if I think I cannot get outside to cook when the dough is ready, I end up putting it in the freezer!! :-)
