How to Make Black Buttercream When You Only Have Gel Dye & No Microwave

While there are better ways to achieve black frosting, such as using black cocoa powder, you CAN make black buttercream using only gel food dye. Here is a good way to do it when you don't want to use the microwave method & you want a vanilla flavor.
This recipe uses two teaspoons of vanilla extract & 4 cups of powdered sugar (a typical crusting buttercream) which offsets any potential bitter taste. Whenever I make a dark buttercream, I try to use less than what the gel food dye manufacturer's (in this case, Wilton's) website says to use. I suppose it's a fun challenge to me.
According to Wilton, you need ONE TABLESPOON of black gel PER ONE CUP of frosting. This recipe uses only 1.5-2 TEASPOONS (depending on the shade you need) of black gel dye PER TWO CUPS of frosting. The total amount of gel dye used in the recipe is 2.5-3 teaspoons per two cups, still less than Wilton, which says to use two tablespoons for two cups.

An immersion blender at the last minute will vastly intensify any color because it changes the molecular structure so you don't have to add more dye.

Would it work if say I used the Wilton violet and americolor super black?.... would u use same amount of black? Tia❤

It should still work! I am not sure on the amount so I would just squeeze a bit in at a time until you get to a dark gray. Also, a trick is to put a small dot of black onto a spoon and add a drop of water. Look to see what color comes out. I think Americolor black has a green base if I remember correctly… if that’s the case, you can also use a dark/forest green as a starting base.

I haven't tried with royal icing so I'm not 100% sure but I do think that this color combination would work well to produce a black royal icing! Best of luck.

Buttercream can melt quite easily in warm temperatures. I would bring the cake out just before/at serving time but otherwise keep it indoors up until then.

I got a bitter taste at the end using 2 cups of butter 😭😭😭 did I use too much purple? Should I have done it in smaller batches

How much powdered sugar? For 2 cups of butter you would need 8 cups of powdered sugar. It is the sugar that offsets the bitter taste in the food dye.

If you're still at a gray after it sits out for a few hours, add a bit more dye. You can add a bit of violet, navy, and black in equal portions until you get to a dark gray. Once it's a dark gray, it will dry black.

@@MaisieCandler-go7dp hi, I tried it and it didn’t come out beautifully as smbc. Not glossy nor fluffy. Bummer, what did work nicely though, was adding a tiny bit of of the dark cocoa adding that which doesn’t change your vanilla flavor unless you add too much. Then to about 1/3 of the smbc add americolor black food coloring, pop it in microwave at 50% power for 15sec increments until it darkens, but not completely melted. Then, return to the rest of smbc and mix with an emersion blender. That really got it black and was the key. Hope this helps, love to know if it did. I tried so many ways to make black vanilla, that finally worked!

Thats great but in the UK/Europe food laws restrict the amount of certain colouring we can add .... this amount of black/dark colours in that much buttercream would not be permitted

Honestly I wish the US was that way too! The only time I use/eat dyes is for decorated sugar cookies so it’s for special occasions. What do you use in Europe/UK to get a nice black?

Yes, this will stain your teeth. To avoid staining, you'll need to use black cocoa powder. Just make sure to not use too much of the cocoa powder or it will also stain your teeth.

sadly for me and my allergy thats way way way too much food dye........just the violet dye was too much already.........and i cant find black cocoa powder where i live and im not a fan of charcoal or microwave stuff and lack a immersion blender......was hoping what you were going to do would be something that would work for me.....
