I have had this once at a street fair in Leimert Park, Los Angeles. She made it into a taco with shredded cabbage and a special sauce. So YUMMY 😋 😋

Cubans call this Boyetos, I love them. I grew up in NY with my Cuban grandma that came to NY and she would make this.

This is the first time I heard of anyone shelling off the "eye" of the black eye pea. If that is the case, wht not use another type of pea?

I couldn't find the market where you recommend to get the Cuisine products, so I'm replacing cilantro for the beni leaf, and scallions to replace the chives. The regular market didn't have the soya bean oil, so I'm using avocado oil

This dish has a lot to do with connecting with the Ancestors .... the peeling is a part of the spiritual journey. The action tends to center and ground you.

No way will I remove the outer layer of my peas! That's where all the fiber comes from! Sorry, I'm too much of a health nut to do that.

You can make it with black eye-peas flour also but it doesn't taste as good.

Tip for removing skin (although Idk why you would): boil with tbs of baking soda. Scoop muck off boiling water and peas. Drain. Add water, massage peas, skins float to top, scoop with spoon.
