I've done this before using a basic cinder block-style paving stone wrapped in foil, worked great. You can also use a foil-wrapped brick, which I believe is where the name comes from. Anything heavy will work, and if you use a pre-heated cast iron pan as a weight you can get a nice sear on both sides at once while reducing your cook time.

Replicated this successfully several times since I watched this. No food poisoning or anything. Just good f*cking chicken and sauce. Served it up to my fambam with some roasted veg and started it all off with a potato leek soup and croutons. F*cking delicious. No worries, just cook it right.

I like the the way she approached it. You don't have this restaurant equipment... no problem use this instead. You don't have a fancy pan whatever use your shit equipment...

Just made this for the fam. It was excellent! Great idea to debone the chicken. Never done that before - and it really wasn't too hard. Only took a about 15 minutes to prep and 20 to cook. The family loved it!

I'd never survive in a restaurant kitchen (read "Kitchen Confidential" [RIP Anthony Bourdain]), but I love hearing from real chefs. They know what tastes good, and they know how to get it done without a lot of unnecessary effort or concern. I never would have thought you could cook a piece of chicken all the way through without flipping, especially with a large conductive block on the top side, and not have one side be completely overcooked.

I have the best success starting with a cold pan. Just some olive oil in a cold pan, put the chicken in (skin side down) and cook on medium for 10-12 minutes until the skin is nice crispy/golden brown. Then flip over and finish in the oven. Never fails.

i've made this a number of times now and it's fucking amazing. also easy to make in large amounts because they don't need to be flipped or watched as much. it's also really easy to gauge the internal temp without a meter, because you can see the opacity of the meat change as you cook it. 5/5

YoutanPoluo Fingers that have been calloused and burned so much over time that they can hold really hot things without feeling pain. It'a pretty common in chefs.

At 6:25 after you drop the butter, but before the lemon juice, you spin around and grab another liquid and drop a tblsp or so in. What was that ? More chx stock? Thx.
