Making butter from cream is a straightforward process that requires minimal ingredients and equipment. Here’s a step-by-step guide:
Ingredients:
1. Heavy cream or whipping cream (preferably with a fat content of 35% or higher)
2. Salt (optional, for salted butter)
Equipment:
1. Stand mixer, or hand mixer
2. Cold water
3. A bowl
Instructions:
1. Pour the Cream:
Pour the heavy cream into the bowl of your stand mixer or a large mixing bowl if using a hand mixer.
2. Start Mixing:
Begin to mix the cream on a medium speed. The cream will first turn into whipped cream, which takes about 1-2 minutes.
3. Continue Mixing:
Keep mixing beyond the whipped cream stage. After several more minutes, the whipped cream will start to break down, and you'll see a separation between the butterfat and buttermilk. This can take around 2-3 minutes in total.
4. Separate Butter from Buttermilk:
Once the butter has formed, you'll notice a solid mass (butter) and a liquid (buttermilk). Turn off the mixer. Strain off liquid from the butter. Save the buttermilk for baking or cooking if desired.
5. Wash the Butter:
To remove any remaining buttermilk, rinse the butter under cold water while pressing it with a spatula or spoon. Continue rinsing until the water runs clear.
6. Add Salt (Optional):
If you want salted butter, now is the time to knead in a small amount of salt to taste.
7. Shape and Store:
Place the butter into a ceramic butter keeper. After your meal, place the lid with the butter into the base with cold water.
