Rachel , this the first time I’ve seen someone make Caldo de pollo the same way I learned from my mother. Browning the chicken pieces first before adding the water makes the Best Caldo. So many cooks just boil the chicken without this essential step. It just isn’t authentic without this step. I’m sitting watching this video wishing I had made some yesterday like I had planned because I wanted to have some after my medical procedure today. I wish I had made my Caldo for a faster recovery. ☺️ I can live on this soup as well as Caldo de Rez. I love them both but Pollo is my favorite. I knew when I started watching your videos that you were a wonderful cook. .. but especially today watching you make Caldo de pollo. You’re teaching the world our Hispanic heritage wonderful recipes we all grew up with. My friends and family always tell me I should do You Tube cooking videos but..., not all of us have what it takes to follow thru with their dreams. Bless you , wishing you the best!

Oh my soul! Thank you thank you for this! I have been living back in the states for a couple years now and lately I have really been missing the comforts I came to love in Hispanic communities. I was searching for true authentic recipes, found your video and tried this for the first time tonight. It turned out perfectly, to be honest it actually made me cry after the first bite I took, but in a good way. Thank for bringing me this comfort tonight. I added lime and avocado to my individual bowl and have been in heaven since then. Much gratitude!

I had this caldo de pollo the first time when we moved to Puerto Rico, many years ago. We were so busy moving furniture Into the house and Lunch time our neighbour introduced themselves to us, and they brought This Caldo de pollo for our lunch,, it was well received by my family as we were tired and truly hungry Now we are back in England, and make this quite often and certainly brings back memories Of our neighbours and our time in PR..Seeing you cooking this is making my mouth water Thank you, 👏👏👏👏 memories come flooding back 🇬🇧🇬🇧🇬🇧🇬🇧🇬🇧🇬🇧
This soup was amazing, made it last night WOW I did a few things different but basically followed your recipe. I agree with grinding the spices, makes the soup really pop! I remember my mother always doing that, so thank you for reminding me of the warm memory 💜

Aw, Rachel, this reminds me of my mother's soups she used to make, and the homemade corn tortillas were the icing on the cake, it all looked like the comfort foods I grew up with.
You make good food very tasty and nutritious. My son told me about the sweet potato in chicken soup and i was hesitant, but it really makes a difference in flavour.. I always add it.. I am jamaican... pumpkin is a must in chicken soup.
I made this caldo today for our lunch, my husband and I have a cold. The caldo Is sooooooo goooood! It really hit the spot. I’m going to add this soup to my regular menu. My husband loves it. I messed up a little by adding a little too much rice. It came out dense but delicious. Next time I’ll be more careful measuring my rice. It’s still delicious and hearty. Thank you. 🥰

irma, exact same that i was just about to post. traditionally in our home 🏡 mom would make the most fluffy brown mexican rice in a large pan. we took pleasure in serving the rice at the bottom of our bowls then adding her yummy (beef caldo for us) soup. ½ a head of cabbage is added flavor for this soup. we squeezed a wedge of lime or limon over our soup and enjoyed with corn tortillas. brings back wholesome memories. thanQ *rachel* for your recipes
