A staple over the Easter period in Cape Town, South Africa is pickled fish.
In the past, fishermen would come home with big catches of fish and in that time, to pickle was to preserve as it would stop the fish from going 'bad'. The Cape Malay aunties decided to make a spicy pickled fish using from the masala mix to the turmeric, bay leaves, coriander seeds and peppercorns.
Since our taste buds from our forefathers were sweet and sour, we added sugar to create that perfect balance. This time coincided with Easter and because there was always a great sense of community and sharing amongst all neighbours as well as tolerance and respect for other religions, the pickled fish recipe was shared to everyone.
Today, it is made to every family's taste and did you know that it is a uniquely Cape town tradition to have Spicy Pickled fish and hot cross buns at Easter? So in essence, the abundance of fish, the creating of the dish, coinciding over the Easter period brought on this Recipe
My story today: many years later is quite the same. At Easter time I get thousands of inbox messages and requests for a delicious fish dish, for example, a Fish Beryani and I share this gladly to the community. In future, I know when the young ones ask their parents where did mom get this delicious recipe from that we always eat at Easter Time, she will lovingly respond..." From a Cape Malay aunty "

Hey Aunt Fatima, Quick question, can I use robenstein rajah curry powder, the medium? And then one last question 😂 my grandmom always said it mustn’t be to sweet or to sour, so how the heck do I adjust it? With sugar or salt?

I just used 2 tsp white course sea salt because my Himalayan is finished, and I'm disappointed in the taste after the salt. I added a little more vinegar and xylitol as I am diabetic. Should have left the salt out. It tasted like real Cape Malay. I use a Durban medium masala and I think there is enough salt in the masala. But, the recipe is the real McKoy!

Ingredients 1,7 kg Yellowtail, cleaned, filleted and cut into slices Oil 6 Bay Leaves 6 large Onions, sliced into rings 3 cups Brown Vinegar 1 cup Water ¾ cup Sugar ​ 1 tblsp Turmeric 3 tblsp Curry Powder 2 rounded Tblsp Flour 1½ tsp Salt 1 tblsp Black Peppercorns, freshly ground black pepper 1 cup Sultanas (optional) Method: Fry fish cubes in oil for about 1½ minutes on each side until just cooked through. Season well with salt and pepper and set aside. Simmer onions in vinegar, water, bay leaves, sugar, turmeric, curry powder, salt and peppercorns for 10 - 12 minutes until they are just cooked, but still crisp. Thicken the sauce with flour mixed to a smooth paste with a little of the hot sauce. Place layers of fish, onions and sultanas in an airtight container (or jars). Pour sauce over and refrigerate. After 3 days, the fish will be ready to eat, and it will keep for six months. To Bottle: Place layers in jars Pour enough sauce over to cover entirely and fill the jar. Release any all bubbles, Put lid on and seal immediately. Will keep on the shelf in dark cool place. Once opened, keep in refrigerator. Alternatives: Kingklip, Cape Salmon, Kabeljou, Musselcracker, Leervis, Mackerel, Snoek, Spanish Mackerel. Store jars upside down👍 2yrs later, hope this answers your question😊

The rest of the world wasn't blessed with Cape Malay, and missed out on daaltjies, koesisters, boboti, kerrievis and the Afrikaans language, which was first written in Arabic alphabet in Bo-Kaap. The Taalmonument's rightful place is in Schotsche Kloof!

Made this last week for the first time, was delicious, only problem was that my Pickled fish was very dry and so it did not soak into the gravy, or lack thereof, not sure what I might've done wrong, pls note that I used 800g hake & 3 large onions. Could the quantity of my ingredients have played a factor in the Pickled fish turning out so dry???😕
