Ingredients for Afghani Chicken
Chicken ,large pieces with bones - 1 kg
(preferably leg & thigh pieces)
Lemon juice -2 tbs
Salt ( As per taste ) -1tbs
Garlic paste - 1tbs
Ginger paste -1 tbs
Coriander powder -1tbs
Cumin powder -1/2 tbs
-Curd /yogurt - 1 cup
-White pepper -1 tsp
Black papper - 1/2 tsp
Kasoori Methi / kasuri methi /
Fenugreek leaves - 1/4 cup
Cloves - 4 to 6
Ghee -1 tsp
-Fresh Cream or Malai
Charcoal - 1piece
OIL -3 tbs
Green chillies - 6 to 7
For Marination :
-Whisked curd /yogurt ( not sour ) 1/2 cup
Lemon juice - 2 tbs
-Salt ( AS per taste)
Garlic paste - 1 tbs
Ginger paste -1 tbs
Coriander powder -1 tbs
Cumin powder - 1 tbs
White pepper -1tbs
Black pepper 1/2 tbs
Kasoori methi -1/4 cup
Other Ingredients :
Oil - 3 tbs
Green chillies - 6 /7
Piece of charcoal (for ifusing smoke to
the chicken for a barbecue flavour )
Ghee -1 tbs
Cloves -4/6
Preparation :
Take the washed and drained pieces of chicken in a
bowl and add all the items for marination .
Mix well .
For infusing smoke to get a barbecue flavor-
Fire up a small piece of chacoal directly on the gas
stove till it starts glowing .
Place a small steel bowl or aluminium foil shaped
like a bowl in the middle of the marinated chicken pieces .
Once the charcoal is ready, hold it with a tong &
place it in the steel bowl .
Immediately drop little ghee & cloves on the burning
charcoal & close the plate or lid immediately.
-Set aside for 20 mins.
Process:
Heat oil in a pan and arrange only the marinated
chicken pieces without the marinade.
-Keep frying the pieces on medium to occasional
high heat , keep turning the pieces till the pieces are
fully browned for around 9 -10 mins ,add green
chillies fry for 1-2 mins .
Now add all the marinade, give a mix and fry for
2 -3 mins . Add 1 cup of water, give a mix (stir once in
between).
Add cream & curd ,give a mix .
Simmer for 2-3 mins.
Serve with rice ,roti or naan.
