Hi everybody, these taquitos dorados ahogados in a delicious red sauce are absolutely delicious!! this is one dish that I can have weekly because it's easy and super tasty...I can use the leftover salsa for other dishes or especially with breakfast over eggs or beans etc...I hope you get to try it.❤
INGREDIENTS FOR CHICKEN AND BROTH
2 chicken thighs (skin off)
2 chicken legs (skin on)
1/4 tsp whole peppercorns
1 bay leaf
3 medium garlic cloves
1/2 small onion
1 large carrot (cut into big pieces)
2 celery ribs (pieces)
small bunch of fresh parsley
1 & 1/2 tsp salt
INGREDIENTS FOR SALSA
4 medium Roma tomatoes
1/4 small onion
2 medium garlic cloves
1/2 tsp dried oregano
4 serrano peppers (or your choice)
small bunch cilantro
1 Tbsp finely chopped onions
1 tsp chicken bouillon
1 tsp tomato flavored chicken bouillon
salt as needed
•grated colby Jack cheese (your choice)
•corn tortillas (about 15)
avocado slices or mashed
1/2 tsp garlic powder
1/2 tsp onion powder
sour cream
crema
chopped lettuce
few tomato slices
MAKES ABOUT 15 TAQUITOS (FLAUTAS)

thank you for the tip with the cheese never thought of that my flautas always fall apart with the chicken hopefully the cheese helps i'm so glad to find someone that can explane mexican dishes in englsih so well thank you

Hi Rachel. Hit a sale on chicken thighs and was wondering what to do with them. Then I remembered your recipe for Chicken Flautas. Oh my, they were so delicious: crunchy, meaty, cheesy and full of flavor. The toppings add such a nice freshness They were difficult to put down and there were absolutely no leftovers. My mother in law made these monthly, for her family of 11; boiling, then shredding the chicken, with onion, rolling them in hard, dry tortillas. We skewered them with toothpicks, and we will she fried them until they were golden, some dark, brown. There were very few left when dinner was over. When I would find them, I ate all of the burnt ones. They were the best. Your way, I cannot wait to try. Thank you for the time, you, and your Ron, take to make these videos. They are going to become a standard for us “güeras”; wanting to learn the Mexican culture, and passing it along to our families.

I've been watching cooking shows and cooking since I was a kid and never knew that I should be adding the chicken once the water was boiling to avoid getting the foam.😲 I will be passing this along and will definitely give you the credit for it. Thank you!

I made these, first attempt, for my son. He filled his plate and went into his room to eat them. So wasn't sure of his opinion. A couple minutes later he came out and said, they were the best tacitoes he ever had..made my day. Thank you Rachel. Next attempt is beef enchiladas and your enchilada sauce. ❤️😋
