Jerky doesn't have to just be beef. Chicken Jerky is fantastic and very easy to make using simple ingredients and straightforward procedures. Here I use the Char-Broil Electric Smoker with some Hickory Wood Chips and the results are just what I was looking for.
Chicken Jerky Marinade Ingredients
1/2 cup Soy Sauce
2 TBSP Lime Juice
1 TBSP Cajun Seasoning (use your own favorite seasoning)
1 TBSP Cracked Black Pepper

I have a friend who's mom used to make sweet and spicy chicken jerky. It was impossible to stop eating them even though your mouth was on fire. She used a lot of red pepper flakes.

@@magnuseriksson5547 I use smoked ghost pepper powder, cayenne powder,soy and teriyaki sauce for my venison and turkey jerky, never made chicken jerky but it will definitely make your stomach burn

Great Video! I do a lot of cooking but have never done any type of jerky. I am off of red meat and can't wait to try this with chicken. You gave me some great ideas and thanks for emphasizing cooking the chicken first since I will be using a dehydrator when I buy one soon. Cant wait!

I've been looking for chicken jerky recipes for my dog, just to know how long to let it dehumidify and not the jerky sauce. I'm so glad I found you. Thank you for letting me know about the cooking times or I would just have put it on 170 and let it cook. Thanks for letting me know about the salmonella.

Absolutely love this recipe, I use it weekly. Flavor is exactly what you want from jerky, and the recipe is very flexible to mix different seasonings and flavors. Considering beef jerky is often $1/oz or more, this is much cheaper! Although I can't justify a fancy smoker or pellet grill just yet, my cheap 22" kettle grill does the job just fine! Thanks for posting this.

Hello. Thank you for video❤ I did this in air fryer on 100 first, then on 75 Celsius. Came out soooo yummy. I added cumin and coriander as well, so taste bit closer to smoked. Next time will use liquid smoke in marination❤

I make it often but always use cure 1, I like to just dry at 165 from the start. I will try the high heat first. Chicken does hold a lot of water.

I always was wondering about chicken jerky now i know how to do it the right way. A Meat market by me makes turkey jerky and they have been making it forever they finally went out of business and now that jerky will be gone forever 😢😢! I wish they would share that recipe with me so i could make it for myself. Thanks for sharing this recipe i will be trying it very soon.

Most of the newer pellet grills have a direct grill function, but I've found that's really a very secondary purpose for them.

Ry love ❤️ Jerky. I don’t know if you have watched Joes Bbq House and the multi racks he puts together to smoke in kettle and wsm. I have one of the aura kettle zone system. If you were to add racks how would you think jerky would turn out on kettle. I am now a proud owner of a vortex you make them seem like a kettle must have accessorie. Lastly how about turkey 🦃 Jerky it Ry-mes.

Turkey works great, but I like to slice it a bit thinner. Maybe 1/8 inch if possible. Nothing wrong with the kettle for jerky. It's all about temp control. As long as you can dial those temps in, it should work fine :)

You can do the same thing in your oven and get 90% of the way there by putting some liquid smoke in the first marinade. Run the first hour at 225, and then set your oven to 170 (if it doesnt go that low, you can get a 60ish dollar table top dehydrator that goes to 170).

Awesome vid Ry. Not going to lie, raw or undercooked chicken terrifies me! I would never have thought to use chicken for jerky! If you were to use preserving salt is the process vastly different?

I've never done that since I don't make it for preservation, but from what I've seen the process is very similar with some additional drying time. But definitely watch some people make it for long term storage if you want to try that :)

So if I were to do it in the oven, could I just add a little liquid smoke to get that smoky flavor or would that overpower the chicken? I'm assuming the temperatures would be the same? 225 the first hour and 170 until it's done? Great video!

Thanks! Yes, I'd use maybe a teaspoon to not overpower it. That's also a good first batch because you can adjust it for the next time. And temps should be the same, making sure to hit that safe temp for the chicken before lowering the oven :)

I store it in the refrigerator. It's usually eaten within five days so beyond that I don't know.

Thank you for this. I've been wanting to make beef jerky for a long time now but never really felt the effort because my gf doesnt really like beef and I wanted to enjoy the experience (not because shes a weirdo, it just kind of messes her stomach up lol) but now that you taught me how to make chicken jerky I'm going to make two batches next weekend. Plus, that means more beef jerky for me :). I know I could've looked up a recipe somewhere else but you gotta stay loyal to someone lol

Also, I sometimes can't tell the difference depending on the marinade. The chicken and beef can taste VERY similar :)

I've had chicken jerky before but it was a single, vacuum sealed, chunky strip and it really wasnt dried out and didnt have that brownish/red color nor the smokey flavor. It was still good but it was not a good experience for my first chicken jerky. (I got it for free in a gift bag)

You sure can. Different dehydrators have different times and processes, and there are some safety necessities with chicken that require heating to a safe temperature, so you have to be aware of that.

I make chicken jerky for my dog. Slice a chicken breast it into 1/4 in thick slices. lay the slices on a drying rack. in the oven at 200 degrees for two and a half to three hours.

@@aybukebeyza4064 yes. I have a convection oven. It's a small countertop oven. The lowest it goes is 200° If you have a full size oven, you want to set the temp at 170. It might not take as long or it might take the same amount of time you just have to keep checking it. I check my jerky around the hour mark.

It really turned out well. What's you opinion on the shelf stability on the chicken? Seems like when I have purchased chicken jerky in the past after it was open it wouldn't last more than few days. Then it would start to have a bad taste.

I wish I could tell you. That stuff never lasts more than a couple days after I make it :)

So, I made some chicken jerky in the oven, added 1/2 tsp of sodium nitrate to it. About a week or so later, now it's kinda slimy, and there's some small "spots," accumulating on it. IS this still safe to eat?

No, chicken has to be brought to a safe temp first. I'd do them in separate batches.

Dumb question here but I just opened the box on my smoker. Since I am making Jerky I won't want to use the water pan right?

I don't use the water pan in mine since it will just add moisture back in. Not sure if yours requires water.

Ry, you need to move your hand way up on the handle of the knife. You should be pinching the blade between your thumb and index finger right in front of the bolster then wrapping the rest of your fingers around the handle. You'll have much better control and cutting will be far easier.
