How to make chicken pie | Using homemade rough puff (flaky) pastry
Rough puff (aka flaky) pastry:
250g all-purpose, plain or cake flour,
1 teaspoon fine sea salt,
250g butter, room temperature but not soft,
150ml cold water

Chicken pie filling:
500 - 800g chicken pieces, preferably breast or any meaty part with the bones,
1 medium onion finely chopped,
Cream of mushroom/chicken soup (or gravy) powder,
Stew mix powder (I used the Royco one),
1 - 2 teaspoons of curry powder (I used the Rajah mild and spicy curry powder),
2 x chicken stock cubes, Black pepper (preferably, freshly ground),
1-2 cups chicken broth (note: in this videi, we make our own broth),
Salt (at the end- if necessary)
Optional:
2-3 x crushed garlic (Note: the stew mix and soup/gravy powder may contain garlic but adding fresh garlic will enhance the flavour of this dish especially if you like garlic)
Alternatively, you can use any savory pie filling of your choice!
Preheat oven to 375°F/190°C for the pie - instructions in video.
Air Fryer Whole Chicken Rotisserie | Banting-Friendly
1 x whole chicken (insides removed),
2- 3 tablespoons cooking, coconut or avocado oil;
1/2 tablespoon salt,
1 teaspoon freshly ground black pepper,
1 teaspoon garlic powder,
1 teaspoon paprika,
1/2 dried basil,
1/2 teaspoon dried oregano,
1/2 teaspoon dried thyme
(You can use any of your favourite chicken spices and add the black pepper and perhaps some cayenne pepper or freshly crushed chillies and garlic etc.)
If you do not have an air fryer then you can use a convection oven or a conventional oven.
Note: the bigger the chicken, the longer it will take to cook.
