Gotta have celery, diced pickles, finely diced onion. Then whatever else you want. Grapes, dried cranberries, raisins, nuts, diced hard cooked eggs, all good additions if you like. 😍
I, too, love the crunch of celery...and red onion...in my chicken salad. So many people and places do not add that for some reason. Your recipe looks good. I need to try adding lemon juice next time I make🙃
I discovered the goodness of adding a little bit of lemon juice years ago, by chance. We were going camping, I made the salad the day before. And well...upon shredding the chicken I saw that the chicken was still a little bit pink. Not a lot. Just a "little sus." 😂😂 I figured, if lemon juice can "cook" shrimp and fish (think ceviche) it should deal with the pinkness of that chicken. And it did! I got compliments on my salad with "I live the zong if the lemon!" Everyone enjoyed and no one got sick. Win. Win. 😅
Ingredients ½ cup blanched slivered almonds ½ cup mayonnaise 1 tablespoon lemon juice ¼ teaspoon ground black pepper 2 cups chopped, cooked chicken meat 1 stalk celery, chopped Gather all ingredients. Place almonds in a frying pan. Toast over medium-high heat, shaking frequently. Watch carefully, as they burn easily. Mix together mayonnaise, lemon juice, and pepper in a medium bowl. Toss with chicken, toasted almonds, and celery.
Celery is a must for me too. I also add dried cranberries and slivered almonds in my chicken salad. I'll add lemon juice next time because Nicole suggested it so it must be good!
Slivered almonds are the BEST! It’s what I use and I also do as you do and slightly roast them. I like a few dried CHERRIES, but your recipe and dressing is perfect! YUM!
I love simple and easy. The only thing I changed was I changed it to walnuts instead of almonds, and Dukes mayonnaise is a must. And don't forget a little onion.
God deam Yeah this is y I cook from scratch. I made onion rings 10 day's ago, the teen neighbor went to whataburger came back with onion ring. Not only were mine triple the crunch with flavor, not steamed as when u buy them then put them is a bag. But was $1.50 to make 15 rings or so. He was pissed for some reason. When I dropped fri I do it out my outside kitchen. Kids are always out side.
Great recipe, one of my favorites is to add ranch dressing instead of mayo, not a huge fan of mayo, also do it like a Arby’s and use grapes and pecans!! Yum
If you have nut allergies, substitute halved grapes for the almonds. If you don’t have lemon juice, stir in Balsamic Vinegar to replace the lemon juice.
Where are the sweet pickles? Got to have a little sweet. I just ate chicken salad for breakfast with celery, cranberries, pecans and sweet pickles. Yummy.
This is pretty much how I make chicken salad but if I don’t have a lemon on hand, apple cider, wine or even just regular vinegar works. A dash of cayenne if I’m feel’n spicy. 🌶️
Been looking at your library of videos and don't see a lot of Asian recipes. Could you make a simple stir fry and fried rice recipes that doesn't use a lot of sauces that I would not normally keep in my kitchen (example fish sauce, when would I use fish sauce in normal day to day cooking). I have standard white bread seasonings at my house, to most Asian seasoning I have is Lite Soy Sauce. Help please.
Holy crap! You just solved a HUUUUUGE problem for me. I've been on a hunt trying to find SOMETHING for either a snack or a final dish that's not heavy for a long time. I never thought of this. Thank you so much....gonna thaw out the chicken boobs right now
