Never let leftover rice go to waste! Make this simple but delicious Chinese Sausage Fried Rice or Com Chien Lap Xuong!
Although you can make fried rice with freshly cooked rice I highly recommend using leftover rice that's at least one day old. This way the rice is firmer and easier to separate. Freshly cooked rice is too mushy to make a delicious fried rice.
I also like crispy rice bits in my dish. To achieve this don't stir too often. In between stirs let the rice pause and toast up against the bottom of the wok. Do this a few times.

Serving: 4 bowls
Ingredients:
4 cups of one day old cooked rice
2 green onions finely chopped
2 eggs
1/4 white onion chopped small pieces
2 Chinese sausage chopped small pieces
3 cloves of garlic minced
1/3 cup sweet corn
1/2 cup frozen peas and carrots
2 tbsp soy sauce
1 tsp sesame oil
2-3 tbsp veggie oil or other neutral oil
salt and pepper to taste
Instructions:
1. Chop green onions, white onion, Chinese sausage and mince garlic.
2. Separate the rice grains and mix in one egg into the rice.
3. Heat 2-3 tbsp of vegetable in a wok on medium high heat.
4. Add in garlic and white onions then cook for about 30 seconds or until fragrant.
5. Add in the chopped sausage and cook for another 45 seconds.
6. Add in rice and season with salt, pepper and soy sauce.
7. Stir it all up and if you want the crispy rice bits let the rice pause and toast against the bottom of the wok a few times in between your stirs.
8. Move the rice to the side and add additional oil if needed. Scramble an egg and mix it into the rice.
9.Add in peas, carrots, corn, green onions and cook for another 30 seconds allowing the frozen veggies to fully defrost.
10. Add 1 tsp of sesame oil and give the rice a final stir.
