Hi guys, finally today I'm showing you how to make chocolate buttercream frosting. Additionally, I'm also showing you how you can customise it to suit your tastes and preferences.
The method used is the same as my boiled milk buttercream frosting with a few tiny yet tasty tweaks that give you the silkiest, most stable and delicious chocolate cooked flour buttercream frosting.

Recipe:
Ingredients:
200 mls chocolate flavoured milk (you get these in supermarkets / local grocery store in tetra packs)
25 grams caster sugar
50 grams dark / semisweet chocolate
3 tablespoons all purpose flour
150 grams salted butter, room temperature

Thank you so much! This is truly such a flexible recipe! I'd left sugar out entirely (as the chocolate milk was sweet enough for me) and it worked like a charm - even in super hot and humid weather conditions!

I love the ermine frosting! Totally agree with you on how sweet the other classic buttercream are! Can you please tell me how I can make this into salted caramel buttercream? Should I just mix the caramel and salt in the end?

Hi Noora! Absolutely, I love the control we have on the sweetness levels and you can also customize this so easily! Oh yes absolutely! You could add the salted caramel sauce in the final 2 minutes of whipping the frosting! Hope this helps!

I’ve been working with Swiss Meringue Buttercream because American is too sweet. I am afraid to try Italian because I foresee a hot sugar disaster. Condensed Milk Buttercream doesn’t look like it would be strong enough as a filling, but Ermine Frosting does. Am I right ... can you use it to fill as well as frost? I’m pretty new to baking, but this Nutella variation looks gorgeous. I love your videos, btw.

Hi Samina, I just made the frosting and it was absolutely life changing and decadent. It's really hard for me to find icing sugar and whenever I made the generic buttercream, I would blend the crystal sugar at home and it was always grainy and too sweet. Thank you so much for this recipe!!!! I also added milk chocolate to milk cuz I couldn't find chocolate milk in the store 😄

Hi, does this form a crust like the traditional ABC? And also how to store the leftover buttercream? How long can we store in the fridge? Can we freeze it if so how to thaw and reuse? Sorry for many questions 😃.

Hi Richa! Thank you so much! Absolutely! It stays stable at room temperature for over 5 - 6 hours and in the refrigerator for up to 3 - 4 days, even in summers! 😍

I tried it ..texture turned out really perfect ...I just have one problem..it tastes and smells bit too buttery to me ..I would be a big help if u could give some suggestion on this

U need to wisk the butter for good 7-8 mins.. There won't be butter smell

Great video! You are a wonderful teacher. I’d like to make this as mocha ... add in coffee. Have you tried that, and is this amount also for 2 6” cakes? I’m making an 8” layer cake and need to know if I can double or triple it, or just make it in batches.

Hi Laurie, firstly my sincere apologies for the ridiculous delay in getting back! Thank you SO MUCH for your lovely comment, this truly means a lot to me! 💗 I haven't tried it yet but I'm sure it would taste lovely! I'd say 1 - 2 shots of freshly brewed espresso or about 2 teaspoons of instant coffee would be lovely ! The one that I've made here frosts about 12 cupcakes or 1 6" cake. So, I'd say if you're using 2 8" cakes, you may have to triple the recipe. Please do let me know if you have any questions at all and I'd be happy to answer them! I hope you enjoy making this frosting, would love to see the cake!

The Cupcake Confession No worries! After just having made a 9” layer cake ... I’ve decided in the future to cut out smaller rounds after baking. If not 6” rounds than 7”. I personally tapped out after three nights while my husband soldiered on to five. And this after giving away 3 substantial hunks of cake. So your original recipe size won’t be too far off. Can’t wait to make it.

I made your ermine buttercream frosting yesterday and it came out so so good and as you said now I am never going back to American buttercream again.. thank you for saving my life from that horrible 'sugar' buttercream..☺️😁
