■Chocolate cream
60g…Couverture sweet
50ml…Fresh cream
150ml…Fresh cream
10g…Granulated sugar
① Melt the chocolate in the microwave or hot water bath.
Add 50ml of fresh cream warmed to around 60℃.
② Add the remaining 150ml of fresh cream.
Strain it and let it rest in the refrigerator.
■Sponge
"Preparation
Spread butter (not listed) on the baking sheet and fix the baking sheet. Separate the eggs into yolks and whites.
① Add white sesame oil and milk to the egg yolks. Once everything is mixed, add cocoa powder and soft flour and mix.
② Whisk egg whites and add granulated sugar in 3 parts to make meringue.
③Add about 1/4 of the meringue to the above
④Add the chocolate batter to the remaining meringue and mix gently from the bottom of the bowl.
⑤Pour the batter onto the baking sheet and level it out.
⑥ Bake in an oven preheated to 180℃ for 10 to 12 minutes and let it rest until it has cooled down.
■Assembling
① Cut the chocolate dough into 5cm width pieces.
② Spread the chocolate cream over the whipped dough until it forms stiff peaks.
③ Make a base by rolling the dough
④ Cover the base with the remaining chocolate cream.
⑤ Cover with the chocolate you made for decoration.
⑥ Finish with fruits, Christmas decorations, and powdered sugar.
