First, using a home ice maker, second large clear ice cube trays and the most pro way to make large block of ice then cut it on desired pieces (large cube for rocks glass and spear)

As a pro tip, from someone who works/worked at bars that has a hand-cut clear ice program, be sure to buy a cooler with a drain at the base to empty the water from under your ice slab with no hassle. You just need to spike through some ice growth around the drain, prop it up by a sink, and when you flip it, no mess. :) God bless you, my crazy Russian cocktail comrade.

@Anonymous it's not impurities. The clear ice freezes in a uniform fashion in one direction. Cloudy ice is cloudy because there are tiny air pockets in the ice. Clear ice melts slower because it is more dense than the air filled cloudy ice.

I have recently started the cocktail journey and have large moulds but the clear ice is definitely better, I haven’t bought any clear ice maker but you can use insulated flask or coffee cup etc to make clear ice with the lid off, they are smaller than the ice box if space is a premium

Did you know, that if you hold power button (for more than 5 seconds) while turning on the ice machine, it will produce a bit sturdier ice? It will add couple minutes to the process. The cubes won't have such big holes inside. I bought that exact machine couple weeks ago, and I'm totally in love with it. Keep being awesome!

@@emmanuel3981 leave it open, the reason you use a cooler is so the ice only freezes from the top (the cooler insulates the water and prevents it from freezing from the sides)

I hadn't drank in a while(no particular reason) and clear ice has me start drinking again but in a more refined way. Jack and coke and jagerbombs didn't promote higher quality drinks. After making a bunch of clear ice I just wanted a reason to use it. I can't go back to regular ice now and I'm drinking things like Old Fashions, Negroni, White Russians and Mojitos. Drinks I've never had before and enjoy a lot better for longer with each individual cocktails. Thank you guys for passing your knowledge.

A warm or hot plate can be used to melt the sides to the smooth and flat edges you need, and it will leave the ice looking perfect.

No, the key is directional freezing. You want to force the air down away from the center. Most home ice cube trays freeze from the outside in, you can do the same thing by getting a large ice cube kit and pulling it out every hour for 5 minutes until it freezes. Won't be as clear, but won't be cloudy either.

Also the boiling of water is to reduce the amount of diffused gasses in the liquid before freezing that contribute to the cloudiness.

@@azncoocoo not by much. More importantly, though, you notice how all the methods leave water unfrozen? That's because with dirrectional freezing, the disolved air is pushed away from the freezing ice at the top and gets concentrated at the bottom while the ice at the top crystalizes without those impurities. If you let it freeze all the way, the bottom would get cloudy just like the center of a normal ice cube. Boiling and distilation make little to no difference. Feel free to save the time and shave down your energy bill a bit by skipping that inconsequential step.

Have you ever noticed a mud puddle that has a layer of clear ice on the top? That is from the freezing from the top down and keeping the impurities out. By freezing your ice in an ice chest and removing it before it’s fully frozen you are doing the same thing.

I KNEW IT!! No I dident know it. But ever since I managed to make pure ice. I have had the feeling it held longer. I love ice and ice cold to drink. I also learnt that using a real hammer to tap on the knife is a little too much, and the ice may shatter. But! When I used a much lighter wooden mallot, the ice separated in a very nice straight line.

To the people who don't want to put hot water into their freezer cause it's not good for it - or the food you have stored in there. afaik it goes something like this: The white in the ice is always air that's trapped. It can be because the ice froze to quickly and the air had nowhere to go because the top is already frozen or because there a very small solids in the water that air bubbles cling to (like air bubbles form on things that are in water; the rougher the surface in the water the more air bubbles). There are different variables that controbute to making it go away. For one, there is the surplus water (e.g. with the insulated ice box); the air can't escape to the top but it freezes so slowly that it gets pushed out into the surplus water at the bottom. If you were to compeltely freeze the water in the insulated box you'd have cloudy ice on the bottom. Using warm/hot water further slows the freezing time. - But in hot water air also expands and rises to the surface and escapes before the freezing process even starts (the hotter the water the less air it can hold). - There is very little air in the soon-to-be-frozen water that can be trapped in the first place, giving you clearer ice. It takes a while for the air to "return" to to previously boiled water; so letting it cool down (best in the tray already; the less you disturb it the less air gets introduced) before putting it in the freezer will still give you clearer ice cubes than not boiling your water beforehand. Of course, best results are probably achieved when combining the hot water with the slow freezing and the surplus water (which is his ice-box example). if you have PLENTY time and space I suppose you could try the following; put hot water into an insulated box, let it cool down a little (aka until it has completely settled). Put Clingfilm on the water - airtight. Let it cool down to temp you're comfortable putting into your freezer. Wait - but try to not let it freeze more than halfway through. - When taking it out you need to melt a little of the surface to be able to remove the clingfilm without having bits and pieces stuck in your ice. Not letting the air back in should give you rsults comparable to putting hot water into your freezer. - Never tried that though; freezer is too small.

Hi there and thanks for the infos…. I have exactly this problem: the ice gets cloudy very fast after the freezing starts so I am not able to make a big chunk of really clear water… and on top of the ice a little mountain raises while freezing the ice and it’s about half an inch in highs or so… I used to fill in normal tab water very slowly so that the amount of air inside the water is reduced… it’s a pity that it ain’t came out more clear…

@@NeoViny you need good isolation on the bottom and the sides so the water can freeze slowly from top to bottom. If you have good tap water you can use that with no problem as when the water freezes slowly the impurities and air will be pressed to bottom so you actually don’t need boiling water.

I tried the cooler method three times but it never turned out as clear as yours. Next time I‘m gonna try it with hot water. Thanks for the great video!

Thanks!! Same here. I was trying it so many times with regular water as a lot of people recommended and ice was never that clear. Also temperature makes a big difference. Should be freezing slow 🧊

it is simple physics and chemistry.. you need to use hot water to get clear ice cubes. this is exactly the reason why I hate these kind of youtube videos. some uneducated idiot (mostly a dropout) shows something very simple but can't explain the WHY... don't skip school buddy or if you already did, go watch some videos or read books about water explained by scientists. it will get you further in life than watching this crap

Your large Ice block reminds me of how cold areas used to cut blocks 5 ft tall and 10 foot long out of the local frozen bay. They would then ship it all over the country.

its not "impurities" that make the cloudiness in the ice, its air getting trapped in the ice as it freezes. nothing to do with "impurities" and no need to boil / filter / distill / reverse osmosis the water, just directional freezing. Other than that great video + tutorial.

Clear ice is a game changer. Now I have to make it weekly ... I just can't stand the clouds. I've never needed to use boiled/hot water with a cooler though - mine comes out crystal clear just using regular tap water (though we've got good water up here in the frozen north).

Recipe: 1oz- Bubblegum syrup (I used Monin) 1 1/2 to 20z- vodka (I used kremlin) 1 0z- Sweet n sour (i used home made) Serve in a chiiled coupe glass Garnish with salt rim and lemon wheel on the rim. Hope you like it 😄
