How to make Collard Greens and Cornbread from scratch

New Orleans Native Charlie Andrews Gives a demonstration on how to make his delicious Collard greens with Smoked Neck bones, rice and Cornbread. This is a soul food dish. Soul food is a variety of cuisine that originated in African American Culture. It is closely related to the cuisine of southern Unites States. This meal is prepared by cutting and cleaning the collard greens really good. Then we take the neck bones and add them into a large pot with water, onion and seasoning added. We then boil it to make a stock. We add the collard greens and let it cook down. The cornbread is made from scratch. We add our cornmeal, flour, sugar and leavening agents into one bowl. Then in a separate bowl we add our wet ingredients. We add our Buttermilk, Butter and eggs. Once done we add our wet ingredients into our dry ingredients. Then we transfer it to a hot cast iron skillet, and we bake it to perfection. Also, as a special bonus i will show you how to make rice to go along with your greens. There you have it! Charlie.... It's me again the New Orleans native who hasn't been home in years I just want to know growing up who did you watch cook it has to be a grandmother somewhere in there who just fired up a kitchenc...you have the skills, you are anointed and I love watching every single thing you cook... Even though you did not do it with this particular recipe you really have to know what you're doing when you make a stock from smashed shrimp heads My grandmother used to do that ...God bless you

Made this whole menu yesterday - haven't had collard greens since we lived in macon ga and had never made them at home from fresh greens! Everything was great , my husband loved it. Used smoked turkey wings because that was what I could get. Thanks for the great step by step recipes! Gonna do more soul food Sundays this winter :-) thank you!

Hi Charle, Just discovered ur channel, watched only 2 videos, ur 7 up cake & smoked collard green w rice. But will definitely be watching more, God willing. I love 7up cake, never made it from scratch, love collards, in my 70s, but never cooked them down like u do, always had pot lickker. But ur way looks delicious. U seem so young to cook so well, I thot u were a chef. Keep on keeping on. God bless.

Charlie, I'm old fashioned, w/fresh collard greens, I was taught to wash the green leaves whole, so you see any dirt & bugs, w/kosher salt & apple cider vinegar, as many times as it takes until the water comes out clear. Otherwise, you're good to go. You must get a commission pushing Tony C. Seasonings, I'm surprised you didn't put it in the rice & corn bread.😵

Hi Charlie, I am fairly new to your channel but I love your recipes and your teaching method. I am also a seasoned cook but I enjoy watching other people do what I love the most, cooking. The tl;dr is: this was *good*. For Saturday night dinner, made the collard greens with Charlie's red beans, rice, and cornbread. (I had to substitute ham hocks for the neck bones as butcher didn't stock them). It all came together nicely, and man, was it good! Thanks so much for sharing, Charlie!

I just love your demonstrations! You use ingredients that are in the regular stores like H.E.B or Wal Mart. I'm used to recipes that you have to run around like a headless chicken to find.

You are a Genius with a Gift from God.! Many men or women do not have the ability to Cook with the gift that you have endowed. I literally review several of your recipes and have made several items during this past Holiday to give to family and friends. I too came from a family from the South and North who only Bake and Cook from scratch. I don't know if you study at a Culinary School or work at any Restraunts. I remember as a child...my mom's invited her friend to dinner...along with the meal mom served collared greens & corn bread...her friend is from the south (Georgia)...we were always taught to have respect for others on how one eat...this lady used her hands to mix her greens & corn bread together...it was surprising too see her do this... it's something that stayed with me throughout my growing years... that's exactly how I want to eat your greens and corn bread...lol!🙏🏽👏🏽🙌🏽😆😋💕

+felicia b. Heyyy there! Thank you so much! Hope that you continue to enjoy my videos! I been wanting to do crab cakes for a long time now. Somehow I've totally forgotten about wanting to make them. Thank you so much for bringing this to my attention because I definitely want to make some. I understand how you feel but sometimes it's hard to duplicate an actual recipe especially your mother's or your grandparents! All you can do is try your best to get to that flavor than if not try something new that can come as close to that particular flavor. Oh yeah maybe so because I cook mostly from scratch so hopefully I can help you find that flavor from a particular dish! Most people compare my cooking to their parents or grandparents.

Charlie I enjoyed your collard greens smoked neck bone with cornbread video I did learn something from the video when it comes to the neck bones boiling them first until tender. Waters level I don't tend to cook them down that low cause it I like they call the pot liquor with the smoke neck bone gives a good flavor and yes I love a little sugar in my cornbread. That was one way to get my children to eat their cornbread thank you so much for your video and sharing have a blessed day😃

My Nanni always greased her pan with bacon grease and even added some to the cornbread batter. She sometimes adds cracklings too. Looks delicious, thank you for sharing :)
