New Orleans Native Charlie Andrews Gives a demonstration on how to make his delicious Collard greens with Smoked Neck bones, rice and Cornbread. This is a soul food dish. Soul food is a variety of cuisine that originated in African American Culture. It is closely related to the cuisine of southern Unites States. This meal is prepared by cutting and cleaning the collard greens really good. Then we take the neck bones and add them into a large pot with water, onion and seasoning added. We then boil it to make a stock. We add the collard greens and let it cook down. The cornbread is made from scratch. We add our cornmeal, flour, sugar and leavening agents into one bowl. Then in a separate bowl we add our wet ingredients. We add our Buttermilk, Butter and eggs. Once done we add our wet ingredients into our dry ingredients. Then we transfer it to a hot cast iron skillet, and we bake it to perfection. Also, as a special bonus i will show you how to make rice to go along with your greens. There you have it!
