How To Make Cooked Flour Frosting (Ermine Frosting)

6.Yep! It's a thing! Ermine frosting (also called roux frosting or boiled milk frosting) is made by cooking flour and sugar with milk to make a sweet paste. This paste is then whipped into softened butter until light and fluffy. Vanilla and salt is added for flavoring. Ermine frosting is a very traditional frosting that is often used on red velvet cake!

Ermine Frosting Ingredients ►
14 oz (397 g) granulated sugar
3 oz (85 g) flour
16 oz (454 g) whole milk
16 oz (454 g) unsalted butter room temperature
2 tsp vanilla extract
1/4 tsp salt
Ermine Frosting Instructions ►
1. Whisk together your flour and sugar in a medium saucepan over medium heat. Cook for about 2 minutes to toast the flour. Be careful not to burn it!
2. Slowly add in your milk, whisk to combine, and bring your heat to medium-high. Bring the mixture to a simmer, whisk continuously until it is thick and pudding-like. Once it's simmering, cook for one minute more.
(Optional) If your mixture has any lumps, place a colander on top of a heat-proof bowl and push your mixture through and into the bowl.
3. Transfer the mixture into a heat-proof bowl. Cover the mixture with plastic wrap so that it is touching the surface without any air bubbles in between, this will prevent a skin from forming on the top of the mixture. Let cool in the refrigerator for a few hours or overnight.
You can also transfer the mixture to a sheet pan, spread it out, cover it with plastic, and put it in the freezer for about 30 minutes to cool faster.
Make sure the mixture is completely cool or it will melt your butter.
4. Add your softened butter to the bowl of your stand mixer and whisk on high until very light and fluffy, about 2-3 minutes.
5. Once the butter is fluffy, place the cooled flour mixture into a piping bag and slowly pipe it into your butter as your whip. Incorporating slowly insures a smooth buttercream.
6. Add in your vanilla and salt, then mix until everything is creamy. Use it to frost your cooled cake. This buttercream will set quickly, so it's best used immediately.

I was surprised by how good this frosting tasted! Very light, almost like whipped cream but more stable. Next time I will definitely use a piping bag to add the roux to the whipped butter lol

Thank you for spreading (spreading, get it?) the word about this amazing and sadly forgotten frosting. It is by far my favourite. You avoid the sickening sweetness of powdered sugar buttercream and the hassle of Italian meringue buttercream. And yes, red velvet cake is so much better with its classic frosting instead of cream cheese. Red velvet cake is already tangy, so the smooth, buttery creaminess of ermine frosting offers the perfect contrast. Thanks for this clear and concise video! Keep up the good work!

This is actually my favorite frosting ever. You can control the amount of sugar in this recipe which I love about it. American buttercream is overly sweet for me.

My grandmother made this on red velvet cake when I was a child. It was so much better than cream cheese icing everyone else made.

This was the frosting on the Red Velvet Cakes I grew up with, not the cream cheese frosting everybody uses. My mom's recipe had all of the same ingredients but she just mixed them differently. She cooked the milk and flour until it thickened and then let it cool. She creamed the butter and sugar and then added the cooled flour mixture and vanilla. It came out the same way yours did.

I’ve never made this so I might be wrong, but I think if you melt the sugar into the milk, you wouldn’t have the granules in the frosting like certain buttercream frostings.

@@harshasri5625 Surprisingly I don't have that problem with the method I use. I do understand your concern but it's as light and fluffy as whipped cream. I sometime us it as a cream filling for cupcakes and everybody loves it.

@@harshasri5625 Correct. This frosting is pretty forgiving in both methods. I cook the sugar in the milk. This DOES prevent granules like you stated I also do not toast the flour and sugar. I simply mix flour with milk and sugar while cold. This helps prevent lumps then I cook the mixture on low until it thickens. Mine turns out more like a paste and is not as runny as this video shows. I let everything cool, beat butter until its good and fluffy, then add the paste a little at a time. One of the best frostings in my book. I plan to try German frosting later.

I made it for the first time today and was mind blown. This tasted so good light and creamy and stable at the same time. I could never like regular butter cream due to the intense sugar but this cooked sugar recipe was amazing.

This frosting is amazing! I paired it with the white velvet cake and OMG! My kids loved it! Im testing out frosting that aren't too time consuming to make my own wedding cake and this is up against swiss buttercream as far as time to make.

I have been searching for a stable and smooth textured frosting in which I could adjust the sweetness. Soooo happy I found this one! Ingredients that I always have on hand and easy to make. I tried it for the first time and it turned out perfectly ! I reduced the sugar by 25% and it was just the right amount of sweetness for me. I did mix the sugar and salt with the milk until they were dissolved as much as possible and then I mixed it with the flour. No clumps or anything. Very smooth! This will be my go to frosting from here on out! Just got to experiment with flavors.

@@zuri2678 I put it in the freezer if I need it quickly. It takes about an hour. If I'm not in a hurry, it goes in the refrigerator. I have reduced sugar content to 50% now and still love it. I prefer stabilized whipped frosting more now, but still love ermine frosting. Good luck!

My mother gave me the original recipe for red velvet cake from a once popular bakery here in New Orleans. She would make one for my birthday if I asked her to. The Ermine frosting they used had lard instead of butter and topped with coconut. They sold it whole or by the spiral slice. Still my favorite cake. Thank ya Mama🤗

I used to make SMBC but not everyone likes it, but having made this I’ll never use anything else. Even now in our hot and humid summer it’s very stable. I can refrigerate it and a week later it’s still good, and no overwhelming butter taste. Thanks, it’s been taste tested by my daughter for her wedding cake this April and she’s happy. Thanks again.

I live in Sunny Singapore & always bake cakes at night when its cooler. The buttercream at first was a lil soupy, so I chilled it in the fridge for 30mins (aft I added all the ingredients), then whipped it again & it magically fluff up!

Oh my goodness I was so surprised to see this recipe! My Welsh Grandmother taught me this recipe when I was a young teenager over 45 years old. It’s was created by English housekeeper named, Elizabeth Raffald in 1769... So it’s definitely “Old School! Imagine doing this by hand with a whisk made out of twigs? I love this Recipe. I'm from germany, and I ususlly make german buttercreme with custard or fruit puree. But you can't make a white buttercreme with that. So I made this recipe today, because its so white and not to sweet. It is fool proof and turned out amazing. I went a little crazy and mixed it with lemoncurd, and oh my god, this is freakin delicious. I added a little drop of purple foodcolor and it went white again. Just perfect. Thanks for the recipe and the video. I love your videos because you're explaining everything so well and you give some expert info.

I've made Ermine Frosting many times and love it much more than American Buttercream because it's not overly sweet. It's smooth and creamy and holds up well even in warm weather. Pipes beautifully.

Oh my gosh I was an Ermine buttercream sceptic being devoted to my wonderful Italian meringue buttercream (IMBC) . I've made a test batch (1/4 of yours) with less sugar as don't like sugary BC and I must say that it tastes delicious, smooth and silky. I'm quite impressed. I also stenciled a test BC small cake to see whether it would stencil well. The verdict is YES! The stenciling came out great. I also piped a test cupcake to see how it performs out of the fridge in Australian summer for the next 6-8 hours. FIngers crossed. It's certainly a lot less work than IMBC and even SMBC. Thank you for your recipe. Wondering whether it's stable enough to frost a full cake and cover in fondant? If anyone has frosted a cake and covered it in fondant does it hold it's shape, particularly sharp edges.

I'm happy to see that someone else pronounces ErMINE like I do. I hear a lot of people say ErMEN frosting and I thought I was pronouncing it wrong. Potato....PaTOTo! Either way, I love this frosting.

Liz I am so grateful for this tutorial on how to make Ermine Buttercream, although I am good at following written instructions, I am more visual and there are really few Ermine Buttercream videos, or at least that I could find :-) I made your white velvet cake and paired it with this buttercream as you suggested, and I could not think of any other buttercream that could go better with it! It tasted just like a vanilla milk shake, it is so easy to make, well balanced, and not too sweet, just perfect! Thank you again!

Ermine is my go to frosting. I love it! I make mine less sweet. Also works with: Cornstarch Almond milk Margarine (tastes horrible). Lol I've even added instant pudding packets, gradually to this frosting to enhance/change the flavor and I've had AMAZINGGGGGH results. My fave!!

Would u agree to add a tablespoon of cornstarch to mix to make it more stable?..... I live in south Texas so it it VERY hot and humid at times.

Hi! Does anyone know if the flour pudding needs to be cool... Or should it just be room temperature when it's added to the butter in the mixer? Do you think that I could make the pudding the day before, put the cling wrap on it, and put it in the refrigerator until I bring it out to use the next day? Should I wait until it gets to room temperature? Or can I use it right out of the refrigerator? Thanks for your time!!!

Wow.. I had always prblm making a frosting.. wil try this for sure.. Also May I ask.. where could we use this frosting?? I mean for fillings?? Crumb coating?? Can we mix flavors or fruits to make it as per the request????

Is there any way to get the air bubbles out if I don’t have a stand mixer? I know you said to mix with the paddle attachment for 10 min. I wasn’t sure if there was any alternative. thanks :)

I tried adding chocolate and it turned out well. I used the Hersheys cocoa powder. I would imagine you could use the melted chocolate chips but the melted chocolate would need to be cooled off before adding to the creamed butter mixture.

Thank you Liz!! I plan on trying this. On the blog you mentioned that it is best used right away. After frosting a cake, will the frosted cake stay fine in the fridge overnight if I want to cut the cake the next day?

I assume you either got your answer elsewhere, or just tried it, anyway, but for anyone else, the many different recipes I've seen (all with these same kind of ingredients) say this will be stable in fridge for up to 3 days, and in the freezer up to 6 months. (I've been comparing and contrasting recipes, to find the one I'm happiest with.)

On coloring ermine frosting, is it okay to use liquid food coloring? Other buttercream frostings tend to water when liquid food color is used.
