How to Make CREAMY MUSHROOM PASTA Like an Italian

Creamy mushroom pasta is moist and delicious - without any cream! Use your favourite mushrooms and fresh parsley to create this mouth-watering vegetarian pasta dish and add oozing burrata for the ultimate cheesy experience.

INGREDIENTS
300g Linguine Pasta
Porcini & wild mushrooms (add your favourite)
Fresh bunch parsley
Salt & Pepper
75g butter
2 cloves garlic
Freshly grated pecorino romano
Whole burrata
Extra virgin olive oil (EVOO)
UTENSILS
Fork
Wooden spoon
Medium fry pan
Large pot (for boiling pasta)
Hand-held sieve
Cheese grater
METHOD:
1. Creamy mushroom pasta is all about delicious mushrooms so choose your favourite and add it in!
2. Start by adding approx. 5L water to a large pot and leave on high to boil.
3. Chop the mushrooms into smaller pieces and crush the garlic cloves so they are ready to add to the base.
4. To make your creamy mushroom pasta, first put your pan on the stove at a low to medium heat and add (approx.) 3 tablespoons of good quality extra virgin olive oil.
5. Once the oil starts to warm, add the garlic (crushed or chopped) and stir.
VINCENZO’S PLATE TIP: To prevent the garlic from burning, add 2 x tablespoons of water to the pan and stir gently.
6. After around one minute, the garlic will start to turn golden and you can add your mushrooms.
7. Stir the creamy mushroom pasta sauce using a wooden spoon so the garlic combines well.
8. Sautée for 10-15 minutes or until the mushrooms are tender (without the lid).
9. Next chop a generous amount of the fresh parsley, making sure to include some of the stalk.
10. Add the stalks first then the rest of the parsley to your pan and stir through.
11. Add a sprinkle of salt and pepper and mix once again.
12. By now, the pasta water should have boiled, so add 1 tablespoon of rock salt and let dissolve.
13. Add the dry linguine pasta to the pot and cook 1 minute less than the required time.
14. Two minutes before the pasta is ready, drop the temperature of the pan to low and add the butter, mixing it through using a wooden spoon until it is well combined and has completely dissolved.
15. Drain the pasta using a hand sieve and transfer into the pan then fill a mug/cup with the pasta water before you tip it all out!
16. Now add the freshly grated pecorino (as much or as little as you like) to the creamy mushroom pasta.
17. Quickly stir this through and then add half a cup of pasta water before mixing once more, leaving it to cook for another minute and mixing really well.
HOW TO SERVE:
Once your creamy mushroom pasta is ready, serve it onto individual plates, making a nest at the top. Add lots of extra mushrooms to each portion then place the burrata on top.
Serve with the burrata whole or pierce it and place it on the table while the middle part is still oozing out.

I like how these recipes are not over complicated, just basic food that everyone enjoys and only the necessary ingredients. Even if I don't recognize some ingredients like the cheese, the name is in the video which makes it easy to find it from the store and try it out! As a lazy student I really like to try these recipes

So I made it! Used porcini, morel, and shiitake to really get that woody wild mushroom feel, but Vincenzo, you’re right as always; the burrata was really the hidden key to unlock the magic. SO GOOD!!!!!!!

Obviously he means Heavy Cream (Whipping Cream) Which people usually call simply "cream"

That’s because in Italy they don’t use heavy cream to make creamy sauce.

It’s cream. Italians take water out of cream to make it cheese and then add pasta water back to make it cream again. Plus butter, so there is double cream in this pasta.

For those in the US, you can get very good frozen mushrooms just like Vincenzo showed at Trader Joe’s if there is one in your area. A great mix of different ones. Great video!

Just bought all the ingredients (much to my surprise I even found the burrata in my local supermarket) and tomorrow I'll give it a try. I already tried so many of your recipes and they all turned out well (my favourite is the tuna pasta). Next week is my wifes birthday and I'll cook a 3 course menu - all your recipes. BTW, I started cooking 4 weeks ago...

Just started watching this channel and am now subscribed. In the short time I've watched videos on this channel I've come to understand something that always perplexed me before. I now have a better understanding as to why it is that Italian and especially Mediterranean Cuisine are considered very healthy yet one Americans cook Italian food and eat it we all get fat. It's all the cream we add to the recipes that is unnecessary. Now don't get me wrong. Bless me Father for I have sinned for there was the Boyardee and I did partake of it LOL. But I'm beginning to understand much more about traditional Italian cooking methods and also that we here in the United States and perhaps other parts of the world too want to focus so much on convenience and quick prep. Amazing! Well done and We're going to try this tonight. Simple, tasty, and fun! I do home-made burrata stuffed raviolis. We call them "Burrataviolis" 😋 . I think you would LOVE this Vincenzo. I'll do a video the next time I make them. I use 1 burrata cut into 4 equal pieces to make 4 jumbo burrataviolis. They are very good with a marinara sauce but I prefer to do a fresh basil and pine nut pesto cream sauce for them. Very tasty!

I wouldn’t want fresh pasta for all dishes. As I have understood it, the Italians don’t either. Some things are best with dry pasta. Do you make your own dry pasta too? Seems so much more convenient to buy dry pasta.

The burrata is truly a stroke of genius. I've not tried it yet, but can vividly imagine how good it must be. Would you advise keeping the burrata out of the fridge for a while before? I feel like the problem with for example cacio e pepe is how quickly everything settles into a big clump of cheese as it cools down, so if you get the burrata down to room temperature first it might help blend everything together better?
