I truly love this method of frying freshly cut potatoes to make French fries! There are so many possibilities with this method! Thank you for turning us on to it! Being a fisherman, my Haitian buddy and brother will be visiting his family, and I will be utilizing this recipe for our fish and chips throw-down! God bless you for enlightening us to it!
Cut potato in quarters ( logs, we call them in the south ), boil 5 minutes ( these are thick. Soso boiling first makes them soft inside ) dry them, season, then fry. Yum !
This is the closest recipe to how they used to be in my local corner store except they was coated in a corn meal/flour mixture and pressure cooked. Thank you for posting this! ❤

This is the same recipe I use for oven fried potatoes. Except after drying them off, I put them in a large Ziploc bag, add oil, toss. Then add seasonings, close the bag and gently toss the ingredients around. I can wash and reuse the bag several times.

Those look like they came from a restaurant 😊 I didn't have good luck when making them like this but I came across a recipe that recommended boiling the potato wedges for 3 minutes and then drying them off and frying them and that did the trick. I just wasn't having any luck with the inside being cooked enough, is that what the ice bath was about?
Oh wow they look delicious. I’m a very picky eater. I don’t know if I would eat healthy. I think I would eat these fries on a daily basis because you know they’re pretty good and mix with ketchup even better.
That’s the way Big Chips were always cooked some 70 years ago as today The only Difference being corn starch and shallow pan, still the end results are fabulous most recommend x ❤ ❤ ❤
Correct me if I’m wrong but isn’t the whole point of soaking them in water to draw the starch out of the potato? Cuz excess starch can make fried potatoes less crispy, more crumbly? Also, potatoes are porous and will soak in the soap the same way it soaks in the fry oil which coincidentally takes care of any bacteria or viruses that could hurt you.
I always did it different. Wash potatoes cut into wedges pore olive oil use season salt salt and pepper in a bowl, drop potatoes in the bowl and mix, drop into hot grease until desired look done.

2:25 PUT it on the bowl then add your seasoning why you make it harder for your self by add seasoning to a each one of them and dirtying all your table. You already put all of them in bowl anyway just dray them up, wipe your bowl then add back your already dry potato to that same bowl then add seasoning. Why complicate your self by cleaning the whole table.

Lastly She put her buns in my face & i smashed her *POTATOES* 🥔 & we had ourselves a nightcap 🧢 hint: i used paprika 🫑 and Italian seasoning 🇮🇹 4 my baked potatoes fries.
