〈Custard Filling Buns〉
✎ Ingredients for 8 inches & 6 inches pan:
Yudane:
Bread flour 60g
Hot water 60g
Main dough:
Bread flour 360g
Milk 225g
Extra large egg (around 60g)
Instant dry yeast 7g
Sugar 30g
Salt 6g
Yudane
Unsalted butter 40g
Custard fillings:
Egg yolk 2
Sugar 50g
Corn starch 15g
Milk powder 10g
Milk 140g
Melted butter 15g
(12g x 5pcs for small pan
23g x 5 pcs for large pan)
Milk wash
Toppings:
Icing sugar 25g
Cake flour 45g
Softened unsalted butter 40g
Milk 20g
(There is some left for this portion, you may adjust according to your needs)
✎ Suggested fermentation time:
First fermentation at 38˚C / 100˚F for 45 minutes or room temperature for 1 hour
Final fermentation around 50 -60 minutes
✎ Baking information:
180˚C / 360˚F for 25 minutes
✎ Mould:
6 inches round pan & 8 inches round pan

00:17 - Prepare custard filling
01:51 - Prepare main dough
04:27 - Shape fillings
04:49 - Final shaping
07:05 - Prepare toppings
07:51 - Prepare to bake
◍ Notes:
- The amount of water needs to be adjusted according to water absorption of flour, weather and humidity of the day
- In hot weather, use lukewarm / cold water or cold milk or eggs; please use warm liquids in cold weather
- Fermentation periods are for reference only,please adjust according to humidity and temperature on your baking day
- The baking temperature and time are for reference only, please adjust according to the specifications of the oven

老師妳好,如果我只想做兩個6寸的烤模,那請問配方要怎麼使用呢?謝謝妳

如果想整兩個6吋: 燙種: 麵粉 40克 水40克 主麵團: 260克 牛奶 大概160克 雞蛋 大概40克 酵母 5克 鹽3克 糖 20克 燙種 牛油 30克 至於餡料及面層配料可以不變,焗的時間大概20分鐘應該可以 (請按自己烤箱作調整)🙂

It is okay to skip it but the flavor of custard will be lessened 😉
