It lies outside the stomach and encases much of the intestines. Open the animal up and have a look, it should be right there in plain sight. If the animal has much body fat, you’ll see it for sure. If it’s a lean animal, it might be hard to find. -SR

I just did this a few days ago with my mule deer. Wow, was it good! I added a touch of my own, olive oil, pepper, montreal steak spice and garlic. Loved it!

I pity people that have never eaten hearts/liver/gizzards of animals. The best eating. Me and my brother used to fight over the turkey entrails on Thanksgiving. Legit near fist fights. Whenever I go to Shady Maple up in Lancaster PA I grab a pack of chicken hearts from the meat section, cook em up in butter with some salt and pepper.

I just had an idea as I sat here eating after this video made me very hungry. Try injecting the hearts anatomy full with your favorite sauce through the artery holes. Also supposedly eating fresh from the carcass after cooking it on coals is very good.

It's a net like membrane that surrounds the internal organs. It's great for making meatballs too. I think Steve may have a video of that too.

Caul. It’s sometimes available at high end butcher shops (usually from cows). Great for wrapping anything you want to keep moist while roasting or grilling.

In an effort to eat as much of the animal as possible, I’ve cut into a decent amount of ungulate livers. I’ve found I often run across some liver “flukes” or cysts. How do you usually handle this? I would be lying if I said it didn’t gross me out to slice into a slime filled gusher and often times end up discarding more of the liver than I wish to.

I went to a foodbank the other day and they had a thing of WildGame. It says buffalo, elk, antelope, venison but none of those isnt markes unless its a combo of all them Not sure where they got it cause im up north of Indiana which i havent seen any of those. I threw in a frying pan and cooked it down just now, but there's no fat so it's real dry. Is there a different way of cooking this or adding something to it?

What if you want to use caul fat at a later point? Any tips on how to freeze it so that it’s easy to pull out only what you need and save the rest?

Caul fat doesn't freeze well as it get's all stuck together. Best to use it fresh.

We always avoid deer fat, cause of it's strong flavour. Is coues different than whitetail or mule deer? Or am I just being a wuss?

+Earthy Em I don't usually use the deer fat for anything, I find its too "Gamey" but thats with white tail and mule deer. To my understanding Coues deer are just a small southern sub species of white tail.

+TysonGoesOutside you're right on the coues deer. Deer fat can be very gamey, but that's the fat on the meat. The organ fat is generally more milder in taste. I hunt blacktails in California and their fat is extremely gamey as well. Trim it off and substitute other fat instead. Hope this helps.

What health benefits do you get from deer heart? Extra protein chalk full of iron maybe?

All organ meat have higher caloric value. More iron, protein and they are packed full of vitamins like folate, zinc and all the B complex vitamins. You can live solely off meat if you eat all the organ meats aswell.

I've got one question. so when field dressing big game i.e deer, moose etc should I focus on removing the organs and storing them someplace cool first, or work on cutting away the limbs and chucks of meat first? also after field dressing my game, should I first try to eat the organs first? because the meat might stay fresh longer in the freezer?

+Vincent2wice I am by no means an expert but typically I try and get the organs out and sorted first, not necessarily in a cool place but just out of the way and separate from the other organs (In cold weather the pile will freeze together) Then I skin it and either half or quarter the animal and hang it to cool and age. I try to get the organs out first to encourage cooling of the meat to prevent spoiling and aging meat is heavily debated, but I like to do it. Typically organs are eaten first but thats not for any particular reason, I think you are right in that meat will last longer but anything stored properly in a freezer, organs included will last a long time. I hope this helps, feel free to ask any other questions and definitely do some more research because its possible I'm doing it wrong.

Wow, wonderful video. It sure made me hungry. I subscribed and I am looking forward to your other videos. However, please change the title. You did not make a fried corn tortilla into a taco shell. You merely wrapped delicious camp fire grilled heart meat with a wheat flour tortilla to make a burrito. A corn tortilla taco is not a wheat flour tortilla burrito.
