Ingredients
1 1/2 lb. Of beef tripe
1 cup of dried white kidney beans
1 lb. Of cassava
1 red bell pepper
4 heads of bok Choy separate the white from green
5 green onions finely chopped
2 onions finely chopped
3 cloves of garlic
2-3 stems of fine thyme
4 head of cilantro finely chopped
1 tsp smoked paprika
2 tsp salt
1 1/2 tsp black pepper
White kidney beans preparation
Soak white kidney beans for a day or overnight (can beans can work too)
Drain the beans from the water it was cooking in
Add the beans to a pot with boiling water
Add 1/2 tsp salt and cook until tender
Drain and set aside
Red pepper preparation
Cut pepper in half and take the seeds out
Brush the pepper with oil and cook in a 350 degree oven for 8-10 minutes
Peel off the skin and blend the pepper with 2 cups of water and set aside.
Tripe preparation
Wash tripe in warm water and remove any unwanted fat
Wash again with flour and lime
In a pot with 4 cups of water
Add tripe
Add 2 cloves of crushed garlic
Add 1/2 tsp salt
Add 1/2 tsp black pepper
Add1 bay leaf
Cook tripe for 20-40 minutes or until desire done
Soup preparation
In a pot with 4-6 cup of hot water
Add cassava
Add 1/2 of the chopped onions
Add 1/2 of the chopped green onions
Add the thyme
Add 1/2 tsp salt
Add 1/2 tsp black pepper
Cook until cassava is tender
Add the bok Choy heads
Add the rest of green onions
The rest of the onions
Add 1/2 tsp more of salt
Add 1/2 tsp more of black pepper
Add smoked paprika
Add the blended red bell pepper
Cook for 5-10 minutes
Add the end of the bok Choy
Add 1 grated garlic
Add cilantro
Add the tripe and cook for 2 minutes
