INGREDIENTS:
6 pounds of beef tripe

Wash with:
1/2 cups of lime juice (2 limes)
Plenty of water

To soften in a pressure cooker:
1/2 tsp of salt
1/4 tsp of oregano
2 cups of water
~
For seasoning:
1 green pepper
1/2 onion
2 large tomatoes
4 tbsp of cilantro
2 tbsp of paprika
1 1/2 tbsp of fresh garlic
1/4 tsp of black pepper
1/2 tsp of adobo Goya
1/2 tsp of oregano
3 tbsp of tomato paste
1 tbsp of sour orange juice
1/2 tsp of hot sauce (Tabasco)
1 packet of full Goya seasoning with "coriander and annatto"
Rectify salt to taste
Rectify the Goya adobo to taste
