How to make delicious Kurma? (Tawah method)
INGREDIENTS FOR KURMAS:
1) 2.2 Ibs (1 kg or 8 Cups) of Flour
2) 1/2 COLD Blue Band Butter
3) 1/2 Can of Condensed Milk (May not need the entire 1/2 tin)
4) Evaporated milk or Cold water for Kneading
5) 1/2 lbs Ginger
6) Cinnamon powder
7) Oil for frying
(Please note that the Ginger and Cinnamon powder or any other spices like nutmeg or spices are all optional ingredients.)
INGREDIENTS FOR SYRUP:
1) 1 Cup of Water
2) 2 Cups of Sugar
3) Ginger (Obtional)
METHOD FOR MAKING KURMA:
1) Mix up all the Flour, cinnamon, ginger thoroughly in a bowl.
2) Cut the Cold Butter into cubes and rub it into the Flour
3) Add the 1/2 can of Condensed Milk and some Evaporated milk or Cold water and knead until a stiff dough is formed.
4) Roll into three (3) balls.
5) Roll out the balls and cook each rolled out balls slightly on a hot Tawah.
6) Cut the rolled out, slightly cooked dough into long diagonal strips.
7) Deep fry in hot Oil until golden brown. And put into fridge in order to cool completely.
8) For the Sugar Syrup, Combine the Sugar, Water and Ginger and boil until a thick Syrup is formed.
9) Pour the hot Sugar Syrup onto the COOLED Kurmas and turn until all the pieces are coated.
10) Keep turning till the Syrup on the Kurmas turns a creamish color.
11) Put coated Kurmas in fridge to cool and put in bags.
(Please note that we used a lot of flour in this recipe. We made 165 individual Kurma. You may not want to make soo many Kurmas. So how many do you want to make?
If you only have 4 Cups of Flour to make the Kurma. Cut down the butter to 1/4 or 2 oz of Butter, and the condensed milk added to the 4 cups of flour 4 full tablespoons.
And for the Syrup 1/2 Cup of Water and Sugar 1 Cup.
If you only have 2 Cups of Flour to make the Kurma. Cut down the butter to 1/8 or 1 oz of Butter down, and the Condensed Milk to 2 Full tablespoons.
And for the Syrup 1/4 Cup of Water and Sugar 1/2 Cup.)

I have tried this method before and the Kumar comes out really flakey and crispy. I do add some coconut cream with the milks also
