Eggs cooked in tomato and pepper sauce (menemen). Quick, cheap, good and tasty recipe. Ingredients for 2 servings:
• A very large tomato or 2-3 smaller ones
• One green bell pepper or 3 bell peppers
• 4 eggs
• Any pieces of cheese you have lost in the fridge - telemea, mozzarella, cheese of any kind
• 2-3 tablespoons of oil
• Optional - a small piece of spicy sausage (30-50 g)
Cut the peppers first. I use Bulgarian peppers (they are not hot) that I cut into rings and use them with everything with seeds. If you can't find it, use a bell pepper, not too big, but it must be green.
Cut the spicy sausage into small cubes. Cut the tomato, or tomatoes, with skin and seeds into small cubes.
Then take a small pan, place it on medium heat and put 2-3 tablespoons of oil in it. Heat the pepper and the pieces of sausage. After 2-3 minutes of cooking, add the diced tomatoes, then let it boil with the lid on for about 10 minutes until everything turns into a sauce.
Then crumble the cheese into the sauce. Of which you have Feta, telemea, mozzarella, you can grate cheese. I put about 50 grams, but you can put more.
Wait for the cheese to melt, then break into this wonderful sauce, 4 eggs, 2 per person.
You can mix eggs in the sauce or you can leave them with the whole yolk. Cook for a few more minutes, just until the egg white coagulates.
