How To Make Ebelskiver ~ The Danish Delight!

Dr. Lou cooks Ebelskiver, a danish pancake in the shape of a donut hole, that can be filled with everything from jam to Nutella, or both. With a special Ebelskiver pan, making the perfectly round treat is pretty easy.
There's another reason why Ebelskiver are cool. Most Americans don't know what they are. For this reason, among others, people are intrigued by the little pancakes! You'll serve up a hit at any party, just like Dr. Lou did this past Saturday.
Dr. Lou doesn't have much of a sweet tooth, so recipes like this are unusual for him. This one, because of the cardamom, is different. It's not overly sweet and it's taste is pleasantly unique. With the jam, it's simply divine.
Ingredient List:
1 1/4 cup Flour
1 cup Milk
2 1/4 tsp Baking Powder
1 Egg
3 Tbl Butter
2 Tbl Sugar
Powdered sugar for sifting
Strawberry, lingonberry or other jam (optional)
1/2 tsp Salt
1/2 tsp Cardamom powder
Hardware:
Ebelskiver pan
Paper towels for oiling pan
Injecting device for filling ebelskiver (squeeze bottle with nozzle)
Thin bamboo skewers (for turning ebelskiver)

Thanks for a great tutorial. No background music, a calm voice and fine visuals to go along. Making these for Christmas with my just acquired Griswold # 32 abelskiver pan. First time made a few mistakes but it was fun! The grandchildren are going to love them!

This is a great description of the technique. I watched my Danish grandma make these when I was a kid. She could flip them with a fork. 😀

36 seconds into the clip, and I HAVE to comment. Æbleskiver are NOT!! a breakfast. I repeat, they are NOT a breakfast treat. They are a snack/treat enjoyed most often in the afternoon or evening. I would recommend using just a tiny bit of butter for each æbleskive immediately before adding the batter. While I realize it's up to ones discretion, if anything was to be added, then it would be an apple-compot (very similar to applepie filling). Add about a teaspoon to 1/2 tblsp when you have poured batter into the pan. Apart from that, your æbleskiver look perfect. Glad you enjoy them as much as we do! I purchased an aebleskiver pan about ten years ago. I used a simple recipe, but did not know much about the proper way to make them until finding the videos on youtube. Giving them a partial turn or rotation to make the outer shell spherical and interior somewhat hollow is an important step. I made the mistake of simply flipping them completely over, but know better now. It is great that you responded!

Yeah, it's all in the technique. I find it takes two or three before I get the hang of it again, but once you get "rolling" it's so easy. They are a HUGE crowd pleaser and I also like that the technique is so satisfying, like you are really crafting something. You've got to fill them with jam and other stuff! Cheers! ~DrL

Been checking quite a few of this "Type" Of video tutorial! Fortunately i just came across your excellent & Magnificent method. Which is definitely the one that I'm going to be using for sure. I bought one of these at a garage sale years ago. Then my husband and I split up and they’re still back in my old garage, I’m sure. I’m going to get it the next time I go visit!

The amazing library in my town has a "Library of things" and I've stumbled across an Æbleskiver pan that I'll be picking up today. I've seen a few videos on youtube for recipes and how to go about turning the Ebelskiver, but I've found your video to be very helpful and informative AND I love that you've added cardamom to your recipe. I've made semlor before, and having that cardamom flavor in baked goods is very special. I can't wait to try these out!! Thanks for the video!

I never had these filled before Had this aunt and uncle and cousins that was living in Scandinavia in the '60s And they made some when the visited and you dip them in sugar That's it. I don't remember them being like a donut hole though, they were more like a bread than a donut In fact they reminded me of Indian fry bread only small and round Delicious Thanx 😐 🚪🚶 Gotta go buy a round pan

"That's it" ??? Sooo .... because your particular family members chose not to make filled ones, the millions and millions of people who do so must be wrong? Do you seriously not understand that food comes in many varieties? Do you walk into Dunkin' Donuts and tell them that all but one of their pastries are wrong (especially the filled ones)? Do you go to Baskin Robbins and tell them that 30 of their 31 flavors are wrong?

@@tamirine1434 - as a Dane I'm weighing in. Æbleskiver are NOT a breakfast. They are a snack/treat enjoyed either in the afternoon or evening. They are - according to the original Danish recipes - NOT filled with jam. Originally they did have tiny apple pieces in them (made as a compot similar to applepie filling). When eating them, on the table you will find jam, powdered sugar as well as granulated sugar. Dip the æbleskive in the jam then into the sugar you have chosen. THAT is the way they are eaten in Denmark. Tip re jam: strawberry or raspberry are most commonly used. But if you can get it, try a rhubarb & strawberry or rhubarb & raspberry jam. Blackberry, a bitter orange (with rind in it) also work well. Merry Christmas! 🇩🇰🧑‍🎄🎄🎁🎀☃️🎄🧑‍🎄🇩🇰

As you're turning them and there's a hole looking like a Pac-Man could you put a piece of apple in there and continue to turn it and cook the apple inside? Would it still make a sphere? Put a little cinnamon and sugar on the apple before 😵

As long as the apple pieces are small, I'm sure that would work. The apple may not cook, but they'd still be good.

Sounds odd, but melted peanut butter works pretty well also. You won’t regret trying it.

Other recipes suggest adding your filling in the middle of cooking so that it's warm

Aebleskivor translates to "apple slices." It would be good to include them, such as precooking them and putting them in the center with the fresh pancake batter. Otherwise you're missing the point

Thanks Anders! Great suggestion! I’m going to do it! But for the record, after researching ebelskiver prior to making the video, I found no mention of apple slices.😬

Ebelskiver in any form are so awesome. I like the idea of dipping them in sugar, sounds really good too! Thanks for sharing your Aunt, Uncle & Cousin's method! I love how recipes have origins and then morph into other delicious creations. The world is great!
