Eel sauce is one of the most widely used sauces in the sushi industry, but unfortunately eel is endangered in two countries! This sushi sauce recipe will show you how to make eel sauce WITHOUT using any eel - making it a more sustainable and healthy option.

Writing this for myself lol At Medium heat add 1 cup of Mirin. 1/2 cup of sake unflavored 1 cup of sugar 4 tsp of hondashi pellets Stir until dissolved Bring to a boil Add 1 cup of soy sauce Bring sauce to low heat to simmer 15 mins Bring it back to boil While stirring add cornstarch slurry 1tbsp water / 1tbsp cornstarch Stir until it lowers back down Allow sauce to boil for 5 minutes or until u see it thicken Allow sauce to cool in refrigerator for an hour then enjoy!

Original eel sauce does have eel. But it's endangered and this version is more sustainable for both the eel and the home sushi chef 😬

only add 2/3 cup soy sauce for a more sweet sauce! a full cup makes it too salty.i eat sushi a lot. this recipe calls for too much soy,but after adding only 2/3 cup instead of 1 it taste identical to resturaunt unagi/eel sauce

If you look through the comment section, he explains why adding the soy sauce in the end wouldn't make it salty. I.e. the extra water content not being evaporated. Just thought you should know

New fan, thanks! I had a spicy crunch roll, which was just a California roll w spicy Mayo added to the crab, topped with fried onions & a drizzle of eel sauce. I’m almost ready to try my new cooking adventure!

Hi Chef! I made eel sauce but mine was sweet 😅. So I used non-alcoholic mirin sweet seasoning, Japanese cooking sake,hondashi(Bonita soup stock), Japanese soy sauce,sugar. Did I choose a wrong kind ingredients? Could you help me to figure it out pls?

Hondashi pellets can be bought at an Asian market usually. you can also get it on amazon.

+Michelle Reith Well now you know! Lol Different sushi bars will make it in different ways - many of which use Eel in the sauce. I wanted to show how to make eel sauce without using any eel and this was the result!

My eel sauce turned out too thin. Tastes great, but when I drizzled it over the caterpillar roll, it just dripped off the edges instead of keeping at least some of its shape. Should I go through the boiling steps again with my finished sauce, or perhaps add more slurry? Or...am I just out of luck on this one?

Adding more slurry would help thicken the sauce, but make sure the sauce is boiling when you add it. :)

Is there a non alcoholic substitute I can use for Mirin and Sake?

Mirin can be purchased without alcohol, but sake cannot. Usually the alcohol is boiled out of the recipe, though. Hope this helps!

May I ask what the use of the hondashi pellets are because I made it without them and it tasted the same as in the restaurants.

How long can you keep the sauce ? It doesn’t contain water so can I keep it minimum for one month sealed ?

I'm not a food scientist, but I've used eel sauce for at least 2-3 weeks after making it. I'm not sure what the full shelf life of the sauce would be, but it seems to me like it could last longer than one month in a refrigerator.

May I ask why you dont add the soy sauce until it boils?

That's a great question! Bringing everything to a boil will do two things: 1) it allows the alcohol from the sake to be cooked out, leaving only the flavor and 2) it give the highest likelihood of the ingredients to dissolve and the flavors to mix together. The reason why we don't want to add the soy sauce until AFTER it has boiled is because we don't any of the water from the soy sauce to evaporate. If we added the soy sauce before the boil then the final result would be substantially saltier.

No, cooking wine doesn't have as much sugar as mirin so it would change the flavor and consistency quite a bit

1 Cup. For some reason I used a 1/2 cup measuring cup in the video so I had to do it twice. Haha

You can just leave them out, but it will taste different. There isn't really a good substitute, unfortunately.

Bunga Rin alcohol evaporate while cooking. Just flavor will remain.

@@Secretsofsushi it's not spicy. It's a neutral taste. I thought it was mayo but it's not as thick as mayo and doesn't really taste like one either

I've never tried using honey instead of sugar, but I don't see why not! Obviously it will change the flavor slightly and it will probably make it a bit thicker as well.

This recipe was designed without the need of adding actual eel. At the time of recording this video, freshwater eel was on the endangered species list in two different countries.

Eel is on the endangered species list in two countries (UK and Japan), so I made this recipe specifically without eel. It has a similar flavor for half the price AND you don't have to contribute to the dwindling population of freshwater eel. :)

Unagi is the Japanese word for eel. So either term will work when you're talking about this sauce. 😊
