I always wondered why mine got tiny pieces of egg n not the thin strands, bcuz I add while boiling!!!!!!! So boil n heat off then when "calm" add & WAIT, OK got it lol, THANK YOU!!!!!!! ♡♡♡♡♡♡♡♡♡♡

Tysm! I found your video about 3 months ago and I now make this 3x a week. Perfect treat for incoming winter on the east coast. I also add 1tbsp sesame seed oil and a full 1/4 tsp white pepper instead of a dash.... Spices it up perfectly.
My eggs have always ended up floating down to the bottom and recombining into a mass on the bottom of the pan. If you have the ability, a little extra liquid really helps so the eggs don't lower the water temp too much as you want it hot enough that the egg doesn't recombine. That said, you also don't want it so hot that it simmers and the bubbles blow out the eggs into particles either lol. Not sure how traditional this is, but I take the tiniest bit of the stock and add it to the egg mixture almost like tempering a custard but far less liquid as you want the eggs to coagulate instead of just mixing into the soup. I usually let my eggs come to room temp before I start and adding this little bit of warm liquid brings them up to temp so they don't cool down the soup too much and stop cooking when they hit the less hot water. This little bit of liquid also helps beat the eggs into a runnier state so the pour is super easy. I imagine you could just stick blend the eggs if you are doing a lot to get really well blended eggs, but I'm not pulling out a stick blender for a single bowl of soup. But again, I feel like if you add too much liquid you might end up with something like custard

I tried this today and it came out great! Thank you! I wanted to make wanton egg drop soup mix but I didn't have wantons so I improvised with perogies. Still was great!
We have quite a few Chinese restaurants in my area, but there's one that opened recently that stands out head and shoulders above the rest, with the best take-out New York style Chinese I've ever eaten. Their egg drop soup is divine. I'm pretty sure that they add some extra yolk to it because it's really rich. This was a cool watch, because although I've loved the soup my entire life, I actually had no idea what was in it! Thanks for the video.

Hand foot and mouth disease just hit the family. Everything hot hurts, but chilled egg drop soup slides down the throat with no pain. I'm making it right now!

Ada Orozco I guess I'm the only other one who adds cornstarch. I make soup a couple times a week and always and cornstarch and some mashed potato to give it some nutrition.
In the UK, we have 'vegetarian sweet corn soup', almost certainly the same but with added sweet corn. 'Egg drop soup' is not very available. For non veggie we have 'Chicken and sweet corn soup' one of my favourites. Great video btw.

Thanks much for this post ! It's just too expensive for my husband and me to order Chinese, and it doesn't make cents if it's so easy to make egg drop soup !
