Today I have the best falafel recipe for you! You just need some small tricks to make this crispy, delicious gluten free and vegan miracle. We made a delicious plate with the hummus and spoon salad as supporting actors, also not forgetting the deliciously crunchy simit! Ingredients:
250 g dried chickpeas, (or 125 g dry chickpeas + 125 g dry broad beans)
1 pack (10 g, 1 tablespoon) of baking powder
1 small onion (120 g), roughly chopped
4 cloves of garlic
12 sprigs of coriander
10 sprigs of parsley
6 sprigs of dill
3 pinches of ground cinnamon
1 teaspoon black pepper
1 teaspoon salt
1 teaspoon hot paprika
3 whole cloves
1 levelled tablespoon baking powder
2 tablespoons sesame seeds
Hazelnut oil (or sunflower oil, grapeseed oil), for frying
Sides:
Hummus (check the link for the recipe, • THE BEST HUMMUS Recipe... )
Spoon salad (you can find the recipe down below)
2 simits, halved (simit is a type of bread coated with molasses and covered in sesame seeds, but you can use pita as well)
Thick, savoury yoghurt or labneh
Pickled cucumbers
Sumac, to garnish
Method:
• Soak the chickpeas with a tablespoon of baking powder for 20 hours. If you don’t want to wait, place the chickpeas in a pressure cooker and fill with water up to the level of the chickpeas. Cook for 5-8 minutes on high heat and high pressure. This works like soaking overnight but the falafel texture will be smoother (puree-like) compared to soaking overnight.
• Drain the chickpeas and place in your food processor.
• Grind the whole cloves by using a pestle and mortar.
• Add in the onion, garlic, coriander, parsley, dill, cinnamon, black pepper, salt, paprika, 1 levelled teaspoon baking powder and cloves.
• Pulse until the mixture is finely chopped and blended, scraping down the sides of the processor if needed. Be careful not to over pulse and turn it into a smooth, doughy texture.
• Mix in the sesame seeds and refrigerate for an hour.
• Shape the mixture into 16 patties by using a falafel scoop or a mocha pot funnel-my invention! -. You can also use your hands to shape them into 1,5-2 cm (~½ in.) thick patties. Oil the funnel and your hands, if the mixture is sticky.
• Pour the oil into a large frying pan to a depth of 4-5 cm (~2 in.) The oil should fully cover the falafels while frying-.
• Heat the oil to 180 C (355 F). You can check the temperature by using a thermometer or dip the handle of a wooden spoon and count to ten. If you can see bubbles, it is at the right temperature. If bubbles come out earlier, it means the oil is too hot. If bubbles come out later, it is not hot enough yet.
• Place half of the patties into the hot oil carefully and fry for 5-6 minutes until crispy and brown. Turn them occasionally and transfer to a sieve or paper towel. Fry the second batch.
• To serve falafel, halve the simit and spread some hummus on it. Top with spoon salad and place the falafels. Finally add some yoghurt on the falafels and sprinkle some sumac. For a classic dish, serve with hummus, spoon salad, pickles, pita, greens and lemon.
Spoon salad:
2 medium tomatoes, finely chopped
4 green pepper, finely chopped (or 1 large bell pepper)
1 medium onion, finely chopped
10 sprigs of parsley, finely chopped
½ lemon
4 tablespoons extra virgin olive oil
Salt
Red pepper flakes
• Mix the tomatoes, green pepper, onion and parsley in a bowl. Season with salt and red pepper flakes. Squeeze the lemon and pour in the olive oil. Give it a good mix and ready! You can also add a cucumber if making this salad in summer.

Refika, My grandma lived in Jerusalem on the main street in a large corner apartment that overlooked a small side street which had a small falafel restaurant on it. From her window on the top floor, she had a perfect view of the oil in the large pan where they fried the falafels. I live in the US, and when I visited her and wanted one of their falafel sandwiches, my grandma would go over to that window, and if she saw that the oil that they were using was fresh, she would let me get a sandwich. That was in 1963 when I was 10 years old. I have been chasing the quality of that extraordinary falafel ever since and I never found anything that matched it...until now. You have brought back such all encompassing sensory memories for me and I THANK YOU from my heart. I pray for your country AND ours. We live in terrible times and you are a shining light that is bringing a lot of people together through a communal love of food and culture and love. Kisses on your head, as my grandma used to say❣️

She cooks like we all do when at home...she cooks for the family, and for the community of it...not necessarily for the chef's table. She also eats her own food like a regular human being...with gusto...not from a tasting spoon. I love that!

I appreciate the amount of information that Refika gives to her audience so they understand the reason why she does the things she does. LIke, do the overnight soak, its better and I'll show you why, and then she shows the two types of falafel mixes and you see it immediately. I love that kind of teaching! She is a very fine Teacher!

I am really sorry I don't usually go back and forth on comments, but you are so wrong and so completely arrogant in what you are emplying that I feel compelled to just give you a few examples how you are mistaken. You say you do not know why she is celebrating, which is quite intriguing as she is quite clear that it is the large number of views she has had on her video on how to make hummus. And yes, it is correct English to refer to the tougher parts of the stalks of parsley as 'woody'. So please, before you criticise, make sure you have your facts correct or maybe just don't criticise as this is a cooking channel and not meant as an ESL lesson.

Refika, just a tip for you. When I do falafel, I usually put the greens and onion first in the food processor bowl and then add the beans. Thus, the greens get minced nicely as the weight of the beans help them mince 🌷🇬🇧🌷 Maria

I was stationed in Turkey back in 06 and ever since then I have been yearning for some good Turkish food. I miss everything the falafels, the flat bread, the chicken tava, the tea. Most of all though I miss the hospitality, the people, and the wonderful cultural experience. It was such a beautiful, and wonderful country and I truly hope to go back again some day but as a civilian.

I grew up in the Middle East (Kuwait!) and Falafel sandwiches were a Friday tradition after church. Been a few years since I left the country and not a day goes by when I don’t think of Arabic food. I made falafel last night using this recipe. I was skeptical about the clove and cinnamon but Refika has never steered me wrong in any recipe or technique so I used 3 cloves and 3 pinches of cinnamon. Wow 🤩 this is the best falafel recipe! Hi Refika! I am half Lebanese and spent my youth in Lebanon where they make the greatest Falafel sandwiches. Although I already make decent homemade Falafel myself, I am very thankful for your video and the tips you gave. Using fava (broad) beans is more of the style in Egypt. Favas are not common in the USA, especially peeled ones that you need.

There is such love in your offerings. Even the language you use to gather together these incredible recipes is closer to a spiritual and relational poetry. Food is so sacred and you honour that in the way you share. I just finished making your Turkish Pide--7 different kinds--for friends, and it was an incredible hit!!! I made this on Sunday, it was my first time trying it. It was good when i made it. I put it in the refrigerator and had it for breakfast the next morning... It was AMAZING. My mom called me asking when i gonna make more (she also had it the next morning).

Rakı ouzo adında Yunanistan'da içiliyorsa, Ortadoğunun her yerinde kebap, kısır, künefe türevleri yapılıyorsa kimse kimseden çaldığı için değil bu topraklardaki kültür alışverişindendir. Falafel de Lübnan'dan diye biliniyor olabilir ama bu ülkede de yapıldığı ve farklı yorumlar getirildiği gerçeğini değiştirmez. Kaldı ki, Türkiye ortadoğu ile kültür alışverişinde bulunduğu kadar aslında bir kısmı da ortadoğunun parçasıdır.

Hi, greetings from India. I had once eaten "Falafal" in New Delhi and had liked, but that was quite simply made. Was not green, served with tomato sauce.... Later back home, I had made it with my own choice of gradients and served it with Tamarind sauce and Indian dish Raita (mixed curd+grated cucumber+ salt+ roasted cumin powder) and every one just loved it. .......... I had used "Chanaa-Dal" (black chic-pea pealed and parted. It is easily available in India) not this one( we call it "Kabuli chanaa" and it's also easily available here). I had mixed some ginger +Garlic +green chillies +onion +coriander and grinder it then added salt, Garam masala and some lime juice. To make perfect chops I used a small stainless-steel biscuit cutter. I shallow fried it on a pan with less oil but even then it came out perfect. Tamarind sauce is also very common and popular in India, especially with these snacks. ..... You can also try it and also Raita. Will love it..... I'm going to make falafal now in a few days. 😊😊

Refıka omg , thank you!. This recipe blew my mind. I've done many of your recipes and they are always the best . I was watching your videos before falling asleep the other day and I was so into this one that I literally dreamed about it(I dreamed I put too little oil and didn't cover the patties lol) . So this morning we went to the fish market here in Moda , got all the ingredients and did the humus and falafel. It was the highlight of our lazy, rainy sunday, incredibly delicious .
