How to Make Fermented Jalapeño Slices | Naturally Lacto-Fermented Jalapeño Pickle Recipe

Fermented Jalapeños are incredibly simple (jalapeños + salt + time), but the finished peppers pack a complex acidity and depth of flavor that makes this our go-to pickled jalapeño recipe. These lacto-fermented jalapeños are spicy, tangy, and perfect for tucking into grilled cheese sandwiches, topping nachos, or as a secret ingredient to make a quick chili taste like it's been cooked much longer. After these are done fermenting we transfer them into smaller jars to store in the fridge, and when we open the last one we know it's time to start a new batch.

I’ve been making these with carrots and onions too… A tip to keep most of the crispness is to add a few Bay Leaves… The tannins help keep that veggie crunch. The carrots, onions & garlic all end up with a spicy jalapeño flavor. I’m starting a new batch today, I can’t wait to try adding lime zest as you’ve suggested. Thank you! 🙌

This recipe calls for leaving your jalapeños to ferment at room temperature for 3-5 days. After the first three days, you can taste to determine if they’re developed enough for your liking or if they should ferment longer. Some folks prefer to ferment their jalapeños for up to two weeks, however, we like ours on the less sour side. It’s totally up to you!
