Hey Dean- you may never see this reply but if you do, save that chickpea flour to make lots of other things with it like vegetable pancakes and chickpea tofu. You may have heard of these dishes. The chickpea pancakes are sometimes called Chilla and other names at Indian cooking sites. Also many other cultures (French,Spain) make these, they are usually savory and are delicious.

Hi 🙂 this is such an amazing recipe! I tried making my own today, did exactly all the same way you did it..but mine turned out to be like super dry and stiff 😔 not that soft to roll, it tends to break as I did roll it for a burrito 🥺 Help please 😭😭😭 Thank you so much!
@MexicanMadeMeatless
@MexicanMadeMeatless 4 года назад
Hi Jhenina, I'm so sorry your tortillas turned out dry and stiff. :( Ok so the tips I have for you is to make sure that the dough has enough water added to it, I live in a hot and humid place so if you live in a dry cooler area you'll need to add more water. Do so one tablespoon at a time, compare it to the way my dough looks like before I let it rest. Also do make sure you let it rest plenty so the flour is well hydrated. Next tip is that when you're rolling out the tortillas don't use too much flour. You see everytime we add flour to the dough when rolling it out, it drys is out and will cause the tortillas to be dry and stiff. When you roll out the tortillas also don't roll them out too thinly, this too causes them to be dry and it's easier to over cook them, which of course will also cause dry and stiff tortillas. Last tip is to not over cook the tortillas. You want them to look just a little blistered and change color but not brown. You'll notice that ones that are cooked as they should be are flexible and soft, overcooked ones are dry and crack. Thank you so much for trying my recipe, I hope you give them another try and do let me know if I can be offer any more help.

These stay soft but like any bread when they are stored in the fridge they will harden up a bit but all you do is warm them up and they'll be soft again. Try not to roll them out too thinly and don't use too much flour when rolling out because these 2 things will cause hard tortillas. Enjoy!

Do you know why my always end up breaking like a stiff board when i fill them and try to roll :(?
@MexicanMadeMeatless
@MexicanMadeMeatless 3 года назад
Hi Han! Sorry that's happening to you. The reasons that's happening could be that not enough water is being added to the dough. Don't be afraid to add more you can always add a little bit of flour back to bring the dough together. I also really suggest you not skip letting the dough rest. This allows the liquid to fully be absorbed and get a good texture on the dough. Lastly another reason could be that when you're rolling them out you're dusting with too much flour. Try not to use so much. Also try not to roll them out too thinly and not to cook until crispy. Hope this helps. Do let me know if I can help any further. Thank you!

@MexicanMadeMeatless
@MexicanMadeMeatless 5 лет назад
Oh no, so sorry to hear this. It's probably because too much flour was added or not enough water was added. Depending on the weather where you live you need to make minor adjustments. Give it another test adding a bit more water at a time until your dough is soft and pliable and do make sure that you let it rest so that the liquid really soaks into the flour and creates that elastic dough. Thank you!

No, it's not necessary. I've experimented with and without and have never found I needed it to get the tortillas to inflate. You can of course add it if you'd like. Thank you!
