The best fry bread I ever tasted was from an old ngapuhi lady from Moerewa. Made similar to the way your dad makes them, she said the secret was in the feel of the dough like you said, not kneading the dough for very long and resting for about 30 minutes. I always liked watching her but it took a long time to get it right. Mine are close but I've yet to taste any as good as hers. They were like pockets of air, they always reminded me of cream puffs.

Nice way of making fry bread but still love the yeast version you get a larger sweet and lite fry bread and also the bread stays soft a few days longer than your way at making them

I tried to make some, the outside cooked quickly but the inside was raw.. took them out and the outside was hard as a rock.. my dough was pretty thin though
