Oh my goodness, I made the best, most amazing gelato I have ever had using your recipe! Instead of pistachio cream I used about twice as much Nutella. And added a teaspoon of salt. All I can say is wow. Wow! Thank you, I will be using this recipe forever (and pistachio is next for us!)
Thanks for a great easy recipe. What I love about it is that you can control the quantity you make by adjusting the recipe so that there isn't a continually tempting GALLON of gelato calling to me with a siren song from the freezer.

Whether or not there is egg in gelato depends on the region of Italy, as does the amount/presence of cream or milk. Much like whether or not eggs or cornstarch are used in ice cream here in the US. That also varies wildly by region. In short, yes, gelato can contain eggs.
Hello, thanks for quick and easy recipe. Since you like pistachio gelato I will let you know that avocado tastes like fresh pistachio and it's color is amazing too so next time try with adding avocado after cooling down the milk, eggs and sugar mixture and enjoy it.

Thanks for the receipt! I followed the same instructions to break the ice every 1/2 hour and left it over night. The ice cream is very hard. What did I do wrong?
It would be nice if you could give an approximate time on how long till the mixture thickens or maybe even show the consistency by pouring some from the spoon.
In Sicily where I was visiting there were 4 Gelato shops on the piazza, there were all kinds of flavors ie wine flavored, green onion which was interesting, But the tiramisu made me weak in the knees and verbally gasp it was so so so good...the store clerks looked at me laughed and asked if I was okay...oh yeah!!!

so basically ice cream is cold milk with sugar, gelato is the same idea but with a higher fat ratio due to the eggs and milks used. tbh its surprising what the 4 eggs do to the taste. can this be done however with almond milk?
for the people who are commenting gelato and ice cream are the same, people usually use gelato to refer to ice cream made in a specific way, it does taste different. it translates to ice cream and technically is a type of ice cream, though I guess ice milk I think it shouldn't contain cream, anyways you get the point. also, is pistachio pronounced pist-aa ah-chio

Have you tried using actual beans? If you scrape out the seeds and add them to the milk cream mixture as you cook them and leave the beans in for as long as possible, you should get a nice vanilla flavour.

I had the same thought. I usually use an 'ice bath' which I think will work well for what we are wanting to accomplish. Pour the mixture into a glass bowl and place the glass bowl into a larger bowl of water / ice (careful not to let the water get into the mixture).
I'm sorry but I followed all the steps and measurements, and my mixture is getting ice crystals, the only thing I did was omit the pistachio paste... I wanted a plain vanilla gelato ): I hate the texture, how can I make a smooth vanilla gelato?

Im trying to male a vanilla ice cream that I had as a kid that taste amazing. Rossi was the ice cream. My problem is I cant get a really good flavour??
