Best is to just add oil to the garlic n ginger and grand it to a fine paste, this will retain it freshness and aroma. If you add water and salt or even vinegar the paste will get soggy and watery. And never freeze the paste as it looses it flavors.
Dont add anything only ginger and garlic grind it don't add water it stay fresh long time stop the mixy and grind again but don't add water if u want keep for long time
