Goan Style Tomato Potato curry
Preparation Time: 30 Mins
Serving- 4 Persons
Ingredients
1. 3 Medium Potato
2. 2 Medium Onion Sliced
3. 3 Medium Tomatoes
4. 1/4 Coriander Leaves
5. 25 Curry Leaves
6. 1 Tsp Mustard Seeds
7. 2 Tablespoon Garam Masala
8. 1 Tsp Red Chillie Powder
9. 1 Tsp Tumeric Powder
10. 1 Cup Grated Coconut
11. 3 Garlic Cloves
12. 1-inch Piece of Ginger
13. Salt to Taste
14. 3 Tablespoon Oil
15. Water
Procedure
1. Cut Potatoes and Tomatoes into Square.
2. Add salt to Tomatoes and keep aside for marination, for 3 mins
3. In a Wok add 1 Tablespoon oil and sliced onion and garlic along with ginger, and saute for a minute now add curry leaves and coriander. Now, saute it till the onions turn golden brown.
4. Now add grated coconut and roast for a minute.
5. Add turmeric powder, Red chill Powder, and Garam Masala and mix well.
6. Now in a mixer grinder add all the roasted masala and grind well into a smooth paste.
7. Now in a pot add 2 Tablespoon oil, after heating adds mustard seeds to it. Now add curry Leaves and sliced onions and saute till the onions are golden brown.
8. Now add potatoes and saute for a minute.
9. Add water and salt and let it cook till potatoes are soft.
10. Add grounded masala to cooked potatoes.
11. After 1 boil add the tomatoes and let it simmer for a minute.
12. Add salt if needed.
13. Add coriander leaves and serve.
