A breakfast option that never gets old: Goan Patal Bhaji! It’s got freshness and flavour (try not to skip the curry leaves!) and best of all, it’s got Potatoes!! I don’t think one can ever go wrong with potatoes. It’s a beginner-cook’s friend, an expert-cook’s comrade and everything in between.
This Patal bhaji is super yum and goes with any bread, or can even be paired with rice and curry on the side. However you like it, let me know!

Ingredients:
3 large Potatoes, boiled & peeled
3-4 Tablespoons Oil
1 teaspoon Mustard Seeds
1/2 Cumin seeds
A pinch of Asafoetida (Hing/heeng)
A sprig of Curry leaves, tear them up into bits
2 medium-sized Onions, sliced and then halved
2 green Chilies, chopped
1/4 teaspoon Turmeric powder
1 Cup hot (boiling) water or some more, as you prefer
Salt to taste
1/4 teaspoon Sugar
Fresh Coriander for garnish
Chopped onion for garnish, optional
