How to Make Green Tea Kombucha

This shows the process of taking the first ferment of tea and bottling it to the second ferment. There are some flavor combination ideas, but really, the sky is the limit
The recipe for a new batch of tea is:
1. Steep 6 organic green tea bags in 6 cups of water for 15 minutes.
2. Add 1 cup of sugar.
3. Let cool.
4. Add 6 more cups of water.
5. Add brewed sweetened tea to large container containing your SCOBY and 1 cup of reserved kombucha.
6. Let sit for 7-8 days, or until a pH registers less than 4.0 (2.5 to 3.5 is fine - the higher it is the sweeter the kombucha).
7. Save 1 cup of reserved, first ferment kombucha and your SCOBY for the next batch.
8. To a flip top, taper neck bottle or an old store bought kombucha bottle add about an ounce of fruit/spices and 1 to 1 1/2 tsp of sugar.
9. Pour first ferment kombucha into prepared bottles to completely fill the bottle (the less air at the top, the more the bubbles are forced into the kombucha).
10. Close lid and gently flip the container to incorporate the sugar.
11. Repeat step 1.
11. Allow second ferment bottles to sit on the counter for two days.
12. Refrigerate and completely cool before opening.
You can use green tea or black tea. My preference is green tea for less caffeine, it's smoother finish, and its additional health benefits.

Great video!! I’m getting into kombucha and this was so helpful. My kids are loving it too. I have six kids and we homeschool here in Maine ❤

Glad it was helpful! I love it as an alternative to when I need a break fromwater and coffee (my other mainstays), and for the kids instead of soda! Plus, it’s great for the gut. Nice to meet a fellow homeschooling mom! Happy brewing!

You know, this is giant, maybe 3ish gallons? I think I bought it at Walmart ages ago. I’ve recently switched to a glass jar with a stainless steel spout that’s 2 gallons and it’s a great size.

Grapes have unferrmentable sugar, so it stays sweet

Can you add honey instead of refined sugar? I apologize if this question has already been asked.

To some degree, you can. The yeast and bacteria certainly do best with sugar, but you can experiment with it.

How much do you drink at one time or how much do you drink a day?

I'll drink 8-10 oz a day, just mostly because there are multiple people in the house who drink it and if I drank anymore than that I'd have to be brewing gallons week to week. Some say you can start slow, with half a cup a day and see how that goes (some people are more sensitive to the fermentation). But really, you can "safely" drink kombucha m multiple times a day. Your bowels will tell you when you've had too much. ;)

Thanks for your question/comment. I don't think it's that bad, actually. I have noticed that is definitely the case if I don't make sure to buy organic - the one time I didn't it really ruined the whole batch. So as long as you're sourcing a good, organic green tea I've found it to be just fine. Hope that helps.
