Perfectly chewy with a hint of sweetness, Green Tea Mochi is timeless Japanese sweet enjoyed by all ages. In this homemade recipe, we will make two versions of the mochi with brilliant contrasting colors. Serve the matcha-flavored mochi with green tea or hojicha for a delightful Japanese afternoon tea!

INGREDIENTS
* White Mochi with Green Tea Filling *
100 g White Bean Paste (Shiroan) (3.5 oz) - Video ( • How to Make White Bean... )
2 g matcha (green tea powder) (1 tsp)
50 g Shiratamako (glutinous rice flour/sweet rice flour) (⅜ cup, 6 Tbsp, or 1.8 oz) - See NOTES
25 g sugar (⅛ cup or 2 Tbsp)
90 g water (⅜ cup, 6 Tbsp, 3.2 oz, or 90 ml)
* Green Mochi with White Bean Filling *
100 g White Bean Paste (Shiroan) (3.5 oz)
50 g Shiratamako (glutinous rice flour/sweet rice flour) (⅜ cup, 6 Tbsp, or 1.8 oz)
25 g sugar (⅛ cup or 2 Tbsp)
2 g matcha (green tea powder) (1 tsp)
90 g water (⅜ cup, 6 Tbsp, 3.2 oz, or 90 ml)

Thank you for the tipp with the refrigerator I have done it with my self made 白あん just intuitive when I made いちご大福. My first attempt making 白あん was before your video how to make it so had to much moisture in it. And it was very soft. Now it does not feel wrong anymore to use the refrigerator :-) Thank you from Germany

When I saw Mochis that are processed on the market, I thought it would be easy to make Mochi at home. After I saw video, it turned out that it is wrong. Now, I realized how grateful is it to buy mochis in just one hand. Thank you for sharing good video again.

Hello, sticky rice flour is not available to me, but I have calrose rice medium grain. I grinded it dry and raw and ground it with a little water and sugar at the end. I cooked it in the microwave and it was the same texture and taste of mochi with sticky rice flour exactly so literally that I doubted Rice type, if I do this will it be authentic mochi? In the end, the same taste and texture, where can I send you a video of my mochi?

It's used for cutting Wagashi (Japanese confectionery). I didn't have enough seconds to cut and show at the end, so I have to bite to show inside in a few second.

I love this..! This video was especially beautifully made. I actually made mochi a few years back but failed miserably. I don't use a kitchen scale and I never use American measurements (I don't want to be rude, I just find the European system makes so much more sense). So I just converted the measurements from the recipe.... and it turned out awful. They were super doughy, and they looked like ugly little green potatoes haha! I gave it up for a long time, though I always planned to try again. Now is the time! If it doesn't work I'll get a kitchen scale and only buy actual Japanese shiratamako, and not the Chinese/Thai varieties of glutinous rice flour I have locally. I must say, whenever I cook Japanese I pretty much only use the Just One Cookbook recipes. Thank you so much Nami!

Thank you for your kind words Sophia! Digital scale is $10 on amazon and I highly recommend to use. No mistake especially baking recipe. Just one tablespoon of flour or sugar etc makes difference in final result and kitchen scale avoids issues. Once you know how to make, you can sense by feeling/touching/seeing it but till then, scale makes sure you get it right. You are right about Japanese glutinous rice flour vs Thai or another Asian kind. They are long grain rice and taste and texture are not same. It’s really do-able to make Mochi. Only important part is to make sure it’s well dusted on your hands and Mochi. 😊 Hope you enjoy making Mochi at home. Thank you for making my recipes! ❤️

@@justonecookbook Wow thank you for the thorough reply. I have followed your recipes for so many years - it's really lovely of you to take your time like this. Gosh I just knew it was the rice flour.. I thought I couldn't possibly have made such a bad measuring mistake back then. I did know the other glutinous flours, and that joshinko too, were different from shiratamako. But I didn't expect that the finished "mochi" would taste like pure powder without it! I will try again with real shiratamako, and I'll get the kitchen scale before trying again this time. Thanks a lot for the advice! ♡

Hi Sophia! Joshinko is rice flour (NOT glutinous rice flour), so it makes firm mochi, not sticky elastic kind. We mix it to make dango or make Kashiwamochi (not that elastic mochi) etc. We change the amount based on the texture of mochi we want to make. Once you get used to it, you can slowly pour water and figure out the texture. Shiratamako is hard to find outside Japan, and I'm really hoping this company I reached out will stock shiratamako for us. I'll write the link once I find out (they ship internationally). :)

@@justonecookbook That would be great if they could ship to Sweden too! The best online shop I have right now is JapanCentre that ships from the UK. It would be great to have other options as well. I would love to see a mochi master post some day, I am very curious as to which methods yield which results, texture-wise. By hand/microwave, using a stand mixer, the mochi making machines. Which ones are closest to the authentically pounded mochi and factory made mochi. I really miss having that ultra elasticity and chewiness that the shop ones had in Japan when K was there T_T

For mochi, I find Shiratamako much much better than mochiko, like Nami says on the blog. My wife bought and tried both, and I immediately noticed how the mochi were smoother with a better chewy texture.
