We make LOTS of wine...thought I'd make another video for y'all on our blueberry batch this year. Looked good and smelled good...we'll see if she tastes good in about 6 months :-) Blueberry wine is one of our favorites! Not may people make homemade wine anymore...hopefully pass this down to one of the kiddos one day.
Hope y'all enjoy!

I'm trying to get this out to all of his subs, the area where he lives took a direct hit from Hurricane Laura. I have No information on him or his family but I would ask that you keep them all in your prayers in these times of hardship for them. I know the area was hit because he once told me where he was from and I live on the east side of the state from him. When Laura entered the Gulf of Mexico it was headed directly for me so we kept a good watch on it. I'm getting really heavy thunderstorms and possibly tropical storms. What a awesome video ! I have never made any wine before but I think I could from watching videos . I wonder as well what the difference was between the two . Do you think you could make wine in a SHTF if you couldn't get the yeast and other stuff ?
@CruzesLouisianaOutdoors
@CruzesLouisianaOutdoors 4 года назад
Hey brother...its pretty darn easy....the yeast just do their thing :-) Oh yea...actually there is enough natural yeast on the blueberry or fruit skins to start fermentation and they would reproduce rapidly...the question would be how much alcohol tolerance do they have...maybe they would just ferment to like 4% alcohol and then die? Its a variable to consider. The beauty of 'bought' yeast are that they are reproduced for very specific alcohol % tolerances so can withstand a higher concentration.....whew I rattled on there for a bit haha
@AaricHale

Mmmmm, Mmmmmm, looks delicious! Perhaps a little oxidation from the air at the top of the three-year-old bottle is why it's darker?💁‍♂️ How does it taste? If it's good, I guess who cares!🤪 What about that grape extract you put in at the end before bottling -- I'm not sure how much active yeast is left or how much sugar the extract has, but is there any further fermentation post-bottling?
@CruzesLouisianaOutdoors
@CruzesLouisianaOutdoors 4 года назад
Hey buddy! Hmmmmm...it could be aging...don't think there is any oxidation in there though after bottling! For wine, the purpose of the Potassium Sorbate added before bottling is to prevent any further fermentation in the bottles...otherwise all the corks would blow :-) I've NEVER had that happen before due to missing that step hahaha! Thanks for stopping by brother!

@@CruzesLouisianaOutdoors - If you add enough sugar to go beyond the yeast’s maximum alcohol tolerance (which, for Lalvin’s EC-1118 is around 14%) you’ll be left with a bit of residual sugar (graviry above 1.000) and no chance of fermentation starting up again. That means back-sweetening is safe, no danger of bottle bombs or popping corks and no need to stabilise the wine with chemicals. If you want a lower alcohol content you can use a yeast with a lower alcohol tolerance 10-12%). That might mean you’ll need less sugar. In order to make sure the risk at accidentally making vinegar is as low as possible, best is to shoot for an alcohol content somewhere over 12-15%. For a nice mouth feel close to that of commercial grape wine, either add some wine tannin before fermentation, or replace one cup of the water with some strong black tea... or add tannin-rich, food-safe leaves like one or two oak leaves, a few leaves from an apple tree, or another food safe leaf you like from a bush or tree you have in the garden. Campden tablets are not necessary if you pour boiling water over your berries and let it cool to a temp your yeast will tolerate... AND make sure your yeast colony is strong enough from the beginning by pitching enough yeast. Sanitising your equipment properly is however a necessity. Instead of acid blend you can use a 50-50 mixture of citric acid and cream of tartar... of use plain ol’ lemon juice. For anyone wishing to add yeast nutrient, an alternative is to boil up some baker’s yeast to kill it off, and to add that to the must before adding the live yeast. Boiled lees from a previous brew works too. Add water, boil for 10-15 minutes, allow to cool and settle, use this settled gunk. Works like a dream. To avoid the production of off-flavours and aid in fermentation (and reduce ageing time a bit) it’s worth it to off-gass the brew once or twice a day under airlock by swirling the fermentation container. Keeping in the lower range of the yeast’s temperature requirements can also help flavours. Fermentation will be slower, but less flavours will escape through the airlock together with the CO2. Happy brewing!

Nice job Chris, your videos never disappoint, always something interesting going on at the Cruze place. Interesting how the older wine darkened with age. Too cool, Chris. Thanks for taking the time to explain the process. I have wondered how folks do it. And it looks like you have quite the collection there at the end of the video. I love that you are using your own blueberries to make a batch. I hope it is a vintage your for you, lol. Great video sir!
