Just started a batch of wild muscadine wine. About to add the yeast around 2000 hrs. Getting around 15% because of the wife lol. Definitely appreciate the video. Wasn’t sure about the prep. on the grapes themselves. So thank you for sharing!

@@KinfolkFarmofGeorgia I do have one question. At the beginning of your video, you mentioned that you use the Campden Tablets at the beginning and the end of the process but I did not see you use them again at the end. Did I just miss it?

❤ here's what I do with that little bit of wine and lees: I have a tall and thin iced tea pitcher that I pour all of the lees into. It settles in a day or two and we enjoy a glass of new wine. Then dump the lees into the compost. Love your videos, thank you!

I do mead and I'll share the two tricks to racking it. With mead, leaving it in the carboy for 12 weeks seems to be the magic time for perfect fermentation - no need to mess with buckets - water and honey straight in, mix with a clean wooden dowl, give the tablets 24 hours to kill any wild yeast/bugs and then add the yeast and chems - no need for nutrients or blooming the yeast first - I use a 5 gallon carboy. After twelve weeks, take a tablespoon of bentonite clay - powdered and food grade - add to four ounces of water, stir/shake until you've got a slurry and then dump it in - replace the carboy and wait 24 hours. You now have crystal clear mead with no flavor contamination from the clay and no loss of color - that's the first trick. Now what about those last two inches with all of the sediment? Grab your pasta pot, put the wife's colander on it, line it with regular paper towels (four layers works for the two-ply) and then start pouring it off - the paper towels catch most of the sediment but you'll still have a gray mead in the pot. Siphon it into a clean 1.75 liter glass liquor bottle then cap and put to the side - give it a few days until clear and settled - then you can carefully pour off the clean mead and now you're only wasting a few ounces of liquid versus what looks to be 2-3 pints in that 3 gallon carboy and nearly 4 pints for my 5 gallon.

At the end of the video I forgot to show me adding the last Camden tablet. 24 hrs before you backsweetn your wine, add the tablet to each bucket so it makes sure that the yeast is dead before you add all that sugar

Loved this video! Like the start to finish approach. My wife and I started making our own wine in Jamaica 🇯🇲 early this year. With all the wild fruit trees available here for picking we’ve had great fun at it. I am fixing to make muscadine wine for the first time ever. I had to find an alternative to the Camden tablets as everyone was sold out! Even Amazon had to postpone my shipment by three weeks! So I found a brewery supply company and let me tell you! The owner was working hard to sell me everything! Fussed at me for not “washing “ my stuff with commercial cleaner, had me buy a testing jar and a hydrometer and Ph test strips. I told her that the video I watched didn’t involve all of this! And she said well you’re taking a chance that your wine is going to explode when it goes into bottles and all this other stuff. I finally told her listen, I’m not wanting to spend a whole lot more money than what I’ve already spent. I’m not looking to make commercial wine, everybody makes wine differently and bought my $30 worth of stuff and walked out lol so I’m praying this wine comes out delicious following your recipe!! Lol so awesome cant wait to see how it turns plsekeep me posted. If not using Campton tablet I would refrigerate after bottling ti nake sure yeast doesn't start back up In the bottle. We've had 2 batches of strawberry explode downstairs si we don't make strawberry any more lol. My mother in law said hers didn't because she kept it in fridge. Goodnluck and keep me posted

After fermentation you need to be careful exposing must to oxygen. While transferring to the 3 gallon carboy you want to make sure you’re not splashing it to introduce oxygen. Keep end of hose under the surface of the liquid. And also eliminate the headspace in the carboy. Should only be about an inch headspace at the top.

Awesome video! Truly. Really love your approach, not just to brewing, but explaining or relaying information. I just racked 60L of a really big bold, dark red grape wine off of 100kg of Hamburger as we call it...but it's actually Black Hamburg muscat grape. And for the end of the year and the brewing season I've just started slightly over 10L, basically ~ 11L of dark cherry mead from the frozen cherries I had left over from the summer. Again, love the channel, happy the youtube algorithm finally recommended it to me...I just subscribed! 👍

Very nice video. I was very interested in your experience with Ison grapes. Last year I made a 5 gallon batch of white wine from Ison’s then back sweetened to ‘Moscato’ sweet and it was good. I just started a 5 gallon batch of white and 15 gallon batch of red using Ison’s. Thanks for the video, it really helps!

I don't recall seeing where the Camden tablets were added again at the end, did I miss it, when do I add? I asked for & received a wine making kit for Christmas, but the instructions were very scientific, I was worried I wouldn't be able to do this. I absolutely love y'alls video, definitely simplified this process for me. We picked muscadines over the weekend and just started ours....I'm sooo excited and now more confident! Thanks so much!

That's awesome. We are still waiting for ours to get ripe. So sorry but I actually forgot to show that on the video. Add it 24hrs before you backsweet and bottle. 1 tablet per gallon just to make sure the yeast is completely dead. I have a pineapple wine video you will probably enjoy as well. Its my wife's favorite wine

Loved this video. Watched it a hundred times. We bottled yesterday. We did not back sweeten because we like it dry. I’m just seeing the comments about adding the Camden tablet. We did not do this. Do we need to warn our friends who received a bottle yesterday?? 😂

I really enjoyed the video. Great job. I do have a few questions. First, after removing the sediment, what did you clean the carboy with? Second, the syphon tube and the bottles, how did you sterilize them? Lastly, if you were going to gift someone with a bottle, how long after bottling would you wait?

1st we drink right away its good. 2nd I just rinse out a few times really well. They do make cleaning tools for the carboys. Yoi can find them on Amazon. 3rd. The bottles I spray the sterilizer in the bottle then I place them upside down to drain in the dishwasher for a few minutes to drain then rinse and ready to go. The siphon I put sterilizer in a bowl pump through then pump clean water through to rinse out the pump

Dump the carboy in a mason jar and put it in your fridge. After a couple of days you can pour off the good wine into a glass and drink it instead of wasting it.

I just had some muscadine wine made by a guy in Alabama. It is really sweet and I suspect very low alcohol. I had three glasses and felt nothing. But it is tasty.

When you first add the sugar to the. water in the glass, before adding in the yeast, is that 1 tablespoon of sugar? Or 1 teaspoon? Stirred into about 1/3 cup of hot water? Thanks! These videos are just wonderful! I can’t wait to start my muscadine wine!

Good Morning Shane. Thanks for reply. I live out close to Villa Rica NW part of State. Will be trying Your recipe to the T ,only difference will be using Sccuppernongs,seeing how My Supreme & Ison Vine did not do Well & found a trick that works well to keep the Deer away from My Scuppernongs. Want to touch on why I use a Perservative Potassium Sorbate @ a very small amount 1/4 tsp. at bottling .I take a qt of same fruit & run it through a countertop Juicer+ the Sugar Syrup like You & add @ bottling, because was not getting that exceptional Muscadine taste that both of us go crazy about HaHaHa! . Seeing the way You make Your Wine I can see how You get more Flavor. I add the Perservative to keep from refermentation, does not seem to effect taste of Wine. Cheers! Kay

Hey , one thing you can do with the inch or so of clear wine sitting over the yeast cake in the secondary is to carefully pour it off into a mason jar and stop when the sediment starts to flow into the jar. Put that in the fridge with the lid on to "cold crash" it. After a day or even a few hours sometimes, you can careful pour that into a glass and Drink it!

You said at the beginning you use the campden tablets at the beginning and at the end. You didn’t catch it in the video where you use them at the end. When do I do that? I am already at the final racking of my 7 gallons of scuppernong wine. It’s going great and it taste awesome.

I add a Campton tablet at the end before bottling just forgot to add at the end of video. But the yeast should be dead anyway. We have had some strawberry restart and blow the corks lol. It was a disaster

The camden tablets do not kill off anything, it just changes the environment, so the fermentation process takes place differently. The bacteria come from within as the grapes breakdown. Whatever the bacteria consume is what determines the end product. Germ theory is a crock of bull. The terrain determines the end product. Great video. Can't wait to make my first batch.

I usually make 5 gallon batches....my solution to the headspace problem is to make an extra gallon, and after primary I have the 5 gallon and a 1 gallon. I'll then use the gallon to top up the big carboy after racking....with a little left over for a taste...lol. If you're not to fussed about drinking unfinished wine then, after you've topped up the large carboy, you can bottle the rest into beer bottles, and pasteurize to stop fermentation...a couple weeks and you can enjoy a young, but clear sample. Yes pasteurization can mess with taste a bit, but it's a waste not want not situation, so who cares?

Love the video it made me try it I am in the process of letting it sit in the carboy for a couple week’s letting it finish fermenting. I have a question though I used concords instead of muscadines and I have this type of purple gunk on the very bottom of my carboy I’ve followed every step in your process would you have some information on what that is or what I can do. Thank you!

I think its just the sediment. The siphon with the cap should help you rack it clean
