If you are going to make mayo a lot, invest in an immersion blender and make in a mason jar. Much easier clean up then the food processor. Add salt, lemon juice, Dijon, egg. Then add avocado oil on top. Plunge the blender down to the bottom of jar and run for about 20 seconds and then slowly pull up to the top until oil is blended

Growing up in the San Joaquin Valley we were surrounded by citrus. My mom made hers with lemon juice and so do I. She used a (now) vintage Sunbeam mixer. I use a stick blender in a jar. A tomato sandwich on white bread, pepper, mayo with real home grown tomatoes is perfection.

Adding lemon to mayo is actually pretty common. Hellmann's/Best Foods does it as well. Mayo needs a bit of acid to cut through the fat, and give it a little extra something.

I make mayo in a jar with a stick blender. I put all the ingredients at once, including the oil. It's no fail every time.

Take all of the ingredients, including the oil. Dump them in the smoothie jar you got with your stick blender. Shove the stick blender to the bottom and turn it on high. As the mixture emulsifies slowly lift the stick blender. You get perfect mayo in about 2-3 minutes, maybe even less and it's easier to clean up.

If you use a narrow enough vessel (some stick blenders come with one), this method can make mayo in a matter of seconds. Literally something like 10 maybe 15seconds. We were taught the traditional hand whisked method at culinary school but once we'd done that and were working jr chefs it was stick blenders and away. For some reason people didn't want to pay us to do a job for 15mins when it could be done in 2 ha

Been there done that. The problem with this method is that the aqueous layer has to be deep enough to cover the blades of the blender otherwise it will break. This means two eggs, or at least one yolk plus one egg, which is more than enough to emulsify two cups of oil. You have to make such a large batch that only lasts a few days and it still might break if you have an inferior stick blender. Also the stick blender can’t get it really thick because the blades stop mixing once a certain viscosity is reached. I went back to the old fashioned way - using a whisk.

Same ingredients but all placed in the bottom of a pint jar (including oil) then blended with an immersion blender. Start with immersion blender at the bottom then pull up slowly. Super easy & less clean up.

I've also had great success using an immersion blender as you described with all ingredients at the same temperature. For some reason, I can't get the food processor method to work for me. My pouring skills are subpar apparently. And making it in the same jar used to store it is such a bonus!!

Your tomato sandwich brings back memories-- When i was very young (3 or 4 years old), Mom would give me a slice of bread or plain crackers with mayonnaise, maybe a sardine on top-- delicious! for toddler taste buds. Thanks for the mayonnaise recipe, will try this 👍🥪

I’ve been making homemade Mayo for awhile. You can use olive just not extra virgin. I like half Avocado oil and organic light olive oil because I can’t have inflammatory oils. I skip the sugar and vinegar. I use lemon juice instead of vinegar. The Dijon mustard has vinegar. After making your own you’ll never buy store brought Mayo again. The only problem with homemade is that it only keeps for about 7 days.

You could try coconut oil it is awesome for cooking, I buy Kirkland brand, it is organic, tasty, keto friendly, high quality and inexpensive.

@@ethanmce I use Kirkland coconut oil in cooking, love it. Not so sure about using it in mayo because coconut oil hardens at room temperature and in the frig. It might give mayo a weird texture and a slight coconut taste.

I use avocado oil and a stick blender. Sometimes a little olive oil if I'm adding garlic and other pungent flavors. Vegetable and seed oils are inflammatory and should be avoided.

Nice video. I always use light olive oil so the mayonnaise won’t have a strong taste. I use the whisk method since I don’t have a blender or food processor and it still come out great. The only ingredient I don’t use is sugar due to health reasons.

I use olive oil Extra Virgin), 2 eggs, and no sugar. I do not notice any bitterness. Interesting and fun to experiment. I’ve added curry, and get a good flavor effect. Oddly, not at all a curry flavor. I will try dill one time - both fresh dill mixed in, and vinegar from dill pickles. I like lots of flavor. Courtesy of Half Vast Flying

Thank you. Mayonnaise does not contain sugar. Many major brands do have sugar, for no reason except to imitate Miracle Whip afaik.

Another winner! I used Sunflower Oil, Spicy Beer Mustard, 2 tbsp Rice Wine Vinegar and 2 tbsp Sherry Cooking Wine... OMGeez better than anything store bought and I will NEVER over pay for Primal Kitchen again!

What are actual amounts of the ingredients? My friend swears by test kitchen recipes but I ain't paying no money to get the recipes. Id appreciate it cuz I don't buy store bought mayonnaise unless it's sir Kensington brand cuz there's no soybean oil or high fructose corn syrup. However that's only small jars and id like to make some potato salad and macaroni salad for church but do not want to use store bought and I have about 6 dozen fresh chicken eggs I can use to make my own. But also does it really matter difference between regular mustard and Dijon mustard?

So, I make my mayo perfectly with an immersion blender with an appropriately sized cup - I put ALL ingredients in, including oil, and let set for 3 minutes. Then, I blend and have perfect mayo every single time, without doing all the dribbling bit. Recommend my method over theirs, as is faster.

I never use olive oil for mayonnaise, mostly because it can alter the taste. Better to use a more neutral sunflower or peanut oil for that in my opinion. I also make my own mayonnaise just using a spoon, as that's how I was taught to do it when I was a kid. You can substitute the vinegar with lemon juice, or just up the dijon mustard quantity a bit. Also, if you just use the yoke of the egg, your mayo has a gorgeous yellow color instead of white.

I use a raw egg yolk for my Caesar salad dressing beaten in a wood bowl with a smashed anchovy fillet, smashed garlic, lemon juice, S&P. Recommendations to coddle the egg for one minute in boiling water beforehand reduces or eliminates the risk of bacteria. I've done that but frankly most times I just use a raw egg. I'm still standing.

Up to a week???? With a raw egg???? It's pretty easy to find literature on the subject written by specialists and experts, molecular cooking and even biologists who say that it's dangerous to keep a house made mayo more than 24-48h especially if some criteria didn't get respected like suffisant acidity, clean (almost sterilized utensils). Salmonella is a serious threat in such food preparations. That's why for exemple that the french health organization is urging restaurant professionals to not keep their mayo more than 24h I think.

I use avocado as well, just be aware that some batches might have a bit of bitterness. That is my experience, anyway. It doesn't put me off, but I add herbs or spices to my homemade mayo to give it a bit more of a flavour punch, so that might mitigate it a bit. I also use apple cider vinegar or lemon or lime juice. I used to love store bought mayonnaise, but after making my own, I can't bear the taste of store bought anymore.

What am I doing wrong? I made this recipe twice, and it turned out great. Then, the last two times, it turned out quite runny. Any advice you can give is greatly appreciated!

More than likely, you didn't get the emulsion going or you didn't blend it long enough. You have to pour the oil relatively slowly at the beginning until the mayo starts to form then you can start to pour faster but never very fast.

Maybe your eggs were older when your may was runny? I run 109 chickens and the older the eggs are the runnier their whites become. My fresh eggs have very firm but elastic egg whites to support their massive tall yolks.

I love mayo so much. I eat jars by the week.. I have never ate homemade .. I would love to try but am so afraid of raw eggs and pasteurized eggs.. . can you show us a cook egg mayo recipe please.

Don't be afraid of eggs! I grew up having raw eggs in milkshakes, we now have our own chickens and as long as they are clean from the coop and not washed they don't need refrigeration. Lots of videos out there from reputable sources to say way. But don't be afraid of eggs :)

@@idnwiw absolutely. But there is now sugar in almost all processed foods and it takes a while for people to get used to real foods. I was recently diagnosed with diabetes, so I have been reading labels. I have been eating low sugar for a long time but ignoring things like mayonnaise and other condiments, I was shocked by just how much sugar is added to processed foods. Potato salad, pasta sauce, salad dressing, the list is endless.

Just buy the cleanest eggs you can. I use a free range organic brand and they are fine, three years of homemade mayo and nobody has ever been sick from it. I would avoid using the cheaper, mass produced eggs. Keep those ones for cooking, but maybe invest in something more expensive for raw use like this. But maybe I'm lying to myself, I can't prove that more expensive eggs are better for this, it just makes me feel safer.

I substituted the vegetable oil with WD40.

But now there's commercial organic mayonnaise made both with olive oil & avocado oil .. and it's not bitter, so why that caveat to only use vegetable oil?!

I have some. It's a blend of canola or soy + avocado and olive. Likely 90% vegetable, and just enough olive and avocado to legally put it on the label.

MAn I just went through a dozen eggs and 4 batches.. all came out runny. I have no idea why. I repeated this recipe and others. Something that should take less than 10 minutes took over 2 hours and a huge mess in the kitchen. I just wanted to make a sandwich, now I have to door dash. Today is a mayo fail. Is it the oil? I have no idea.

@@MrEquusQuagga HII just DO NOT USE ANYTHING GMO, ALL CORN OIL IS, CANOLA, IS typically, my # 1 is GHEE, then GRAPESEED , , AVOCADA, I have cooked with, but it is my preffered salad oil, with SHERRY VINEGAR ,,then there is SPANISH EVOO, MANY moons ago we used to get 1 gallon cans of PEANUT OIL, now you can only find in in small bottles for too much $ stay well, 🇺🇸🇺🇸🇺🇸🇺🇸

No whole egg?? Sorry this is not done correctly and there is a reason not to use the yolk. Just because it is the way you make it doesn't mean that it is the correct way and regardless if it emulsifiers.

Everything should have the same temp. And add oil VERY slowly in the beginning.

Everything should be at room temperature. I usually crack my eggs (I double a recipe similar to this one) into my container, put in the dijon and set a timer for 15 to 20 minutes. When that goes off, I put in the acid (vinegar or lemon or lime juice) and the entire amount of oil and then use my immersion blender. If the temp is off, it will not emulsify properly. If you're using a food processor, do the same thing but add the oil slowly instead of using all the oil at once.
