Ive enjoyed making my own cheese for years, because when you have a milk cow, you've got to make cheese! I'm so excited to share this with you, starting with mozzarella.

Oh, this makes me want to get back into cheese making. And since our cow has recently freshened, and we have a second cow freshening in a month, I think cheese making is in the near future. Thanks for the inspiration! 💜

@@VenisonforDinner Agreed. I was just getting pretty good at a few cheese recipes when they both backed off their production to calve. Can't wait for fresh cheese.

Problem with my mozzarella with the spoon stretch method made with 2 gallons skimmed milk. I added citric acid at 60⁰ then added rennet at 93⁰ after clean break, I heated and stretched at 125⁰ to 137, 140ish. It stretched was shiney and slwhite. But really small amount probably a point and a little more. Not much. My husband but the glass dish I placed it in into the fridge uncovered. The whole loaf of cheese is clearish white. No whey in the dish. Why did it turn this cir?

You’re awesome! Have you made it without rennet and with just vinegar and salt before? I’ve seen some videos as we don’t keep or can always get rennet.

I've made paneer and ricotta using just vinegar but never mozzarella. Let me know if you try and it works!

OK, any suggestions for what to do with all the whey? I don't have pigs or any animals. thanks! Also, my mozz turned out good, but kind of yellow inside... so i'm guessing i didn't stretch it enough.

Yellow and still grainy? If so yes, stretch it more. You can make bread with it, but watch the salt. Honestly animals are the best use of it! If you don't salt it you could water garden with it

@venisonfordinner Help! I did everything right..had beautiful thick curds, but when I strained it...I stirred a little to help it drain...and it crumbled up and won't shape into a ball. What did I do wrong? Milk is about 3 days old..used rennet from New England Cheesemaking Supply. 😢 I mean..I salted it and will eat it by the spoon, but I was so sure it was gonna work !😂

This is a PH issue which honestly can be hard to figure out. Try again and hopefully it will work.

How do you store this? I've had success making it, but it dries out so quick. I want to make a few batches over a few days for pizzas for a birthday party. Do I leave it submerged in the water in the fridge? Can it be frozen?

We always shred it then store it in the freezer.

Do I have to boil the raw milk first? Or just heat it up like normal n begin the process???

Can you use store bought homo milk? Would love to try this but with only 1.5acres we won't ever be able to have our own cows...

The recipe says it was deleted. Can you do this with skim milk? Also can you use skim milk for your Alpine recipe?

This exact recipe is here- venisonfordinner.com/2019/07/29/homemade-mozzarella/ But I also suggest you check out this recipe for using skim milk- venisonfordinner.com/2020/06/25/easy-homemade-mozzarella-cheese-skim-milk/ For making alpine, I wouldnt use a fully skimmed milk, but about a 1" creamline if that makes sense?
