Just wanted to let you guys know that I watched your other grape juice into wine video. I was given a bunch of culled produce several months ago. There was a lot of table grapes. After I discarded the bad grapes and stems, I had 14 pounds. I ran the grapes through my juicer. There was 2 gallons of juice. I boiled the juice. Cooled it and added the yeast. Then transferred into 2 one gallon wine jugs. It was surprisingly good. If I get more table grapes, I'll make it again. Thank you for your easy recipes!

I like this recipe. I started home wine making the way most people probably do with store bought grape juice. In fact, I followed your video on making fine wine from grape juice. It turned out fine, but with a very strong concord grape juice taste. But by making it I learned the basics and it made it easier to learn more and more and more. I think when I make this I'll blend this purple grape juice with white grape juice just to take the edge off of the strong concord grape flavor. But I like that you posted this wine recipe. It's really fun to get creative and try different fruits and additives. But sometimes it's good just to kind of get back to basics with a more traditional wine.

I have used fleischmann's active dry yeast on many meads and wines using your recipes (or variations) and I have consistently got the wine to dry or a measured 13.6 abv. Obviously my accuracy is only as good as a hydrometer can be but I get the same abv with different remaining sugars quite consistently. I am very happy with fleischmann's active dry yeast for these type of brews

If you want a stronger more grapey wine with less sugar use frozen grape concentrate and dilute it with the less water then put crushed grapes in a fermentation sock/bag and take the gravity. I didn’t use a recipe when I made my version of this but I had a gravity of 1.100 and used much less table sugar to get there than I normally would.

There's a simple and obvious rule of thumb for raising gravity (I know the error was just a simple mistake, but it's a great opportunity to share the observation that) points needed X ten X gallons of must is usually close enough. With 450 ish grams in a pound and with a pound of sugar in a gallon giving about 45 points then 10g sugar in a gallon gives one point gravity. It's not exact, but it's easy to remember and gets you close enough in most cases.

I have a question/remark about fermenting vessels. I´m doing a rhubarb wine at this moment (among other brews), after racking from primary i had a full 5 liter carboy and some excess fluid that i put in a smaller largemouth vessel (vessel 3,3l and wine was about 1,7l) the wine in the largemouth finished 10 days ahead of the 5l carboy. Have You ever compared different vessels in that way? Or noticed any difference?
@CitySteadingBrews
@CitySteadingBrews 6 месяцев назад
When you rack early like that you remove some of the yeast so the larger vessel probably had more of the remaining colony and had less stress so it finished more quickly. For those who would stick their nose up at Concord or other New World grapes, a lot of Old World wine grapes are a smattering of hybrids from Vitis labrusca and don’t always fall under Cabernet, Chardonnay, Pinot Blanc, Gris, Noir, Zinfandel and the like. I have been having this thought about the glassware selection and your hand warming it so never use stemless, etc.. Even if you sip it it will not last more than 15 minutes. If 15 minutes makes the biggest difference than maybe the flavors are too volatile. Also the more you drink the less flavors things seem to have to me. A trick Iv learned from Some math I did for adding sugar to get to the correct abv I want is, for regular white table sugar, 100 grams equals roughly 10 points in a gallon, another thing, that fast rack brand of fermenter, will never use again, twice now, I was making a brew, I heat my Juice to 80 degrees before I add to the jar to give the yeast a better start,’twice now, they randomly shattered after I added all my ingredients, I know you aren’t supposed to shock glass, but 75-80 degrees should NOT do that, worst mess ever, it was a heavy brew with 1.140 starting gravity both times too.. since went with a thicker more expensive brand.

I know this is off topic but if u ever get the time to read or ur not to busy what’s the difference in champagne and sparkling wine I did some research and I found out it from a specific region but it’s still made from grapes and it’s re-carbonated in the bottle is it a specific grape because we have champagne in the United States for four or five dollars in my brain and that doesn’t really seem like it could be authentic is it just a marketing thing or is it because champagnes go up to 18% or is because they have more carbonation it just seems like there the same thing just carbonate your wine more it doesn’t need to be 18%

Why use the grape juice to hydrate the yeast? Doesn't that defeat the purpose? I thought the whole idea of rehydrating yeast first was so that it's not shocked by the sugars of whatever mixture you're fermenting...
@CitySteadingBrews
@CitySteadingBrews 15 дней назад
Hydrating is just to wake them up. Using the juice is fine or water. The amount of sugars is not going to shock them and it's less of a shock than putting yeast from water into a must anyway.

@bretsmith8681 then you know we don't use most of those things so I am not qualified to do an in depth discussion of their use. We have never used sorbate, used sulfite twice and won't again most likely and sparingly use pectic enzyme.

Maybe try blueberries instead of, or in addition to, table grapes in the next grocery store wine for more depth.

We have made blueberry wine. This was intended to be grapes but if you wanted to you could certainly add other fruits.
