How to make the best Hot Cross Buns you've ever had in your life. This recipe makes perfect, fluffy and soft Hot Cross Buns every time without failure. This recipe is fun to make and will definitely keep you occupied whilst we are all indoors. These are seriously delicious. Happy Easter!
Makes 1 Dozen (12)
Ingredients -
1 1/2 Cups (375ml) - Full Fat Milk
1 Tbsp (9g) - Dry Yeast
1/2 Cup (110g) - Caster Sugar, 2 tsp Seperated
4 1/4 Cups (640g) - Bread Flour Plus Extra For Dusting
Bread Flour is important for this recipe
1 1/2 Cups (200g) - Sultanas Can be substituted for chocolate chips
2 tsp - Ground Cinnamon
2 tsp - Ground All Spice
1 - Orange, Zest Only
1 - Free Range Egg, Beaten
50g - Unsalted Butter, Melted and Cooled
3/4 tsp - Sea Salt Flakes
1 tsp - Vegetable Oil
To Make The Crosses -
1/2 Cup (70g) - Bread Flour
95ml - Cold Water
Sugar Syrup Glaze -
1/2 Cup (110g) - Caster Sugar
150ml - Boiling Water

Hiya, I was wondering if the cooking temperatures you say are for a fan oven or electric oven as you would need to reduce the temp by 20° for a fan. Please could you advise. Very well presented video am looking forward to trying them.

Hey, Chef! I still can't get around my head of how much your channel is amazing! Recently I have been on cooking-spree of your recipes, made 15 or more I think. Every single one was amazing! Every single one. I cooked tika masala that is better than any other I have tasted in Indian restaurant! I am so proud of myself and it is all thanks to you, John! I believe I am not the only one who feels that way just because of you :)) until this day I didn't know what the yeast did and how it worked, guess what? Now I do! I really hope you do have unlimited amount of recipes up your sleeve. I am 120% making these buns, but I just can't stand sultanas, so is there anything else I can replace them with? Don't want to use chocolate, so it wont be sweet. Thanks in advance. And once again... You are amazing and keep on spreading wonderful flavours around the globe! Peace ✌️ and love ❤️

you could try any kind of soft dried fruit i think. maybe currants, diced dried apricot maybe. anything you like.

This is fantastic to hear. I’m so happy you enjoy the recipes and the tips and tricks I teach. I do indeed have an endless amount of recipes up my sleeve. You can substitute the sultanas for Any dried fruit, frozen raspberries or mixed berries, poached apples, pear, apricot, plum etc. These are best served with some sort of fruit. If theirs a certain fruit that you like the most, let me know and I’ll run you through how to add it in. Thank you very much! 😊😊😊

SuperPlugas Yum, freshly grown berries. Nothing beats home grown. Defrost the frozen berries and pat dry to avoid a soggy dough. Simply add them in the same time you’d add the sultanas. It will change the colour of the dough but will have a delicious raspberry taste throughout. 👌👌

usually they're cut in half and toasted under the grill then simply topped with butter. leftover or stale ones can be turned into an awesome bread pudding.

These are best served toasted with some butter however, you can serve these with some Creme fraiche, jam, marmalade, salted caramel and peanut butter. If you want to be adventurous you can even serve these with bacon. 😉👌

i just made these and they are, hands down, the best hot cross buns ever. bread flour is a must, and the sugar glaze is so important. to anyone thinking of skipping it- DONT. it adds a perfectly sweet, slightly sticky but mostly crispy and reflective glaze to the top and it’s so so good. the orange is so good too in this recipe, add more than you think because of how much it all rises and expands. warm, fluffy, yummy. also thanks so much for all the tips and tricks and explanations - it makes the video entertaining and informative and easy to follow! sending love from australia

Hi Jack. Hope your well ,Another amazing recipe from you 🙂 I want to try making these but I dont have bread flour. Can I use plain flour or self raising flour with baking powder added to either of them I only have them and so sorry to be a pain but I cant go out to source more as Im in the high risk group and am self isolating,

Hello! Of course, plain flour will change the density of them slightly but it’s okay to use. Do you have yeast? If so, you won’t need to add baking powder. Just follow the recipe exactly the same. if you don't have yeast, i'd go with self-raising and baking powder. but the end result may be more scone-like.

This is a great recipe, and no complaints from anyone that had one either! Another nice glaze is to heat some marmalade and brush over the top. It definitely makes the top sticky rather than crunchy, but tastes great too.

This is an amazing, sure fire recipe. I used French t55 bread flour and followed the recipe assiduously using a Tower bread maker for leavened dough setting. Added sultanas manually halfway through dough mixing. Resulting risen buns bigger than the video and amazingly fluffy and delicious. Marvellous, but not good for diets!!! Thoroughly recommend, though!

I've just watched and read four or five recipes for hot cross buns they all claim to make 12 buns and yet they all have different amounts of flour different amounts of butter different amounts of milk etc etc And different techniques, when to add the currents etc

Hi Chef Jack. I made these buns today. I followed the recipe except for the orange zest. I also put in a dash of vanilla and a tablespoon of potato flakes in the heated milk. I added raisins and egg wash before baking. I mixed/kneaded it in a machine and let it rise in the fridge overnight. I've made a few HCB recipes this month and this is the best one so far. Family had no critiques, just positive comments. I asked, 'what can be improved?" Response, "nothing. These are nice". Sugar and spices were on point. I made 12 buns (85 grams) and 3 (95 grams). Thank you.

Tried this twice and the dough was dry and crumbly I checked all the measurements and put two eggs in the second attempt because I only had small. I mixed it in a mixer with a hook. Total disaster. Don’t know where it went wrong any ideas?

With the milk, egg and butter and the correct amount of flour I can’t understand how it was dry. The only thing that would make it crumbly would be too much flour when kneading.

Can you reduce the amount of yeast and wait longer for the dough to rise? If so, would you extend the first rise or the second rise?

What can you substitute the yeast for.

You can substitute the yeast and bread flour for self raising flour. The reason we use yeast is when it activates, it expands forming air bubbles that achieve a fluffy, aerated product. Using anything other than yeast, you will not experience the full potential of this recipe. They will be a lot more dense and not rise as much.
