I had to double the recipe for my family, they absolutely loved them. Spicy, light, warm, with a simple yet yummy glaze. And the grandkids told me the story of Easter as we dribbled the crosses on them. Thank you for sharing. Greetings from Australia.

i just made these, and want to say that the recipe on the website leaves out the second proving, before you shape the buns. but I recommend including it because they took ages to rise but the end result was superb, of course!

British Mixed Spice is equal portions of cinnamon, nutmeg, and allspice. There is generally no ginger in it.

I made these a few days ago this time I used my homemade candied peel. I forgot to use the lemon zest. They turned out excellent. The point I'm trying to make is that you don't need both the zest and the candied peel. I had previously made them with the zest and no candied peel still tasted excellent

Mary here in the States the cross is applied after the glaze using white soft icing. Yours look far nicer. I love you and your channel.

Good tip about the yeast and salt staying apart. I made some today, before I watched your video, and they came out as hard as cannonballs! So disappointing. I thought maybe the yeast (dried) was too old. I've had it a year. Also, I only proved them once for an hour and a half. So I'm going to try again and use your tips. Thank you :)

do you have to use the flour water mixture to make a cross? or could you slightly cut one in

Cutting it probably wouldn't show after baking as the dough swells a bit - the flour and water works well but if you don't have a piping bag just pop it in a plastic sandwich bag and cut a hole in one corner. Some people ice it on top but I'm not a fan of that method XD

In my country we put the crosses on after they're baked using royal icing. I love the extra sweetness and I dip mine in condensed milk when eating.

rajivronald which country is that? In Australia and UK we use the method in video. The fruit rolling into the bread is what makes it sweet and when made fresh so good with butter. Everywhere cross made differently. Not sure which is the actual traditional way. Some seen use royal icing after baked for cross, or brush sugar syrup on top for glaze. Really up to person preference and their traditions that they grew up with.

Did ypu know that Allspice..is fronm one leaf only..on the island of Madagaskar.THE NAME ALL SPICE is confusing...because its only one tree that produce leaves calles allspice! Im from SUOTH AFRICA .. VISITED THE SPICE ISLANDS!8

In the middle of making these on to the final proof but my yeast is dead but another 9 month on the date I've just made bread with the same batch of yeast and it didnt rise like it usually does but bread tastes good still hope the buns do too x

A simple sugar syrup or even warmed honey are both fine. I like to add a bit of orange zest to mine.

Could I cut the caster sugar down to 60 grams or less?

Definitely! As long as you don't cut it down below 1-2 tbsp as the yeast needs some sugar to respire which is what produces the gas that lets them rise:) The fruit adds plenty of sweetness so I'd say 60g sounds perfect. You can also do 2 tbsp caster sugar and the rest of the mass with a sweetener (I use granulated canderel when I'm baking for my brother) if you are worried about the sugar side.
