I don't know what it was about what you have written, but I broke down and cried. I live in Israel and I hate this constant debate I have inside of me of my love to my home and my people that just experienced horrible loss and pain, and the absolute hate of the suffering we cause. I hope one day I'd be able to deal with that. Love reading your thoughts about it, it was very empathetic and I'm thankful for it ♥

"Gardening is free" my gran would say, having spent £300 on a greenhouse, £30 on the compost, about £10 on the seeds, and then she'd usually burn the food anyway.

The £300 was a one time purchase, and can be reused many times. The compost and seeds could be a recurring cost, depending on how sustainable the gardening is.

The upfront cost can be a lot, depending on how hard you go on it. But if you do buy something structural, like a greenhouse, you can keep using it year after year. Compost can be made at home. Seeds can be harvested from your plants if you really want to go for it. It's one of those hobbies that can get cheaper over time.

A) Being able to have land for a greenhouse is a privilege. B) The land gets taxed too C) You’re time isn’t free. Take your pay rate and multiply it by how many hours you spend taking care of your crops, plus all the annual fertilizer and utilities costs and then you have a realistic cost analysis.

I'm not super confident in my own understanding of the fermentation process, but off the top of my head I believe it's mostly CO2. Upon further research that seems to be mostly from yeast fermentation (if the Encyclopedia Britannica can be believed), so I'm definitely still not confident in my understanding of fermentation in this case, and open to being corrected.

Dear Mrs. Green, I do not know you, we will almost certainly never meet, however, I would like to thank you. Watching your sons for 8+ minutes a week for over 10 years has profoundly changed my life in unimaginably positive ways. The example they set and the ideals they implore are far and away the most impactful influence (outside of my own wonderful family) in my life. Thank you with all my heart, Mrs Green (and Mr Green, too!), for raising such wonderful human beings. The world, and my life, are a far far better thing because of y'all.

Couple tips: they make airlock lids for mason jars that reduces your risk of mold to close to 0. Also, you can reserve like 1/3 to 1/2 of the total salt you're using, and sprinkle it on top of the mash when you're done. The surface is where most bad bacteria live (and yeast, which looks kinda like mold and makes it taste terrible IMO, but isn't toxic). This is called a salt cap and it's pretty standard in mash fermentation.

You can actually overwinter your pepper plants if you really wanna go hard. Cutting back the plant both above and below ground and bringing them in for the winter in a pot is an excellent way to jumpstart pepper production in subsequent years, as the plant will already have an established root body and some sturdy branches to bud off of. Our Habanero is 3 years old now!

As a home grape grower and wine maker I feel your pain. Sure, the ingredients are cheaper than a store bought wine but the labor. And Mom's time and love is priceless. Save a bottle for the future. Some day (far FAR in the future, I hope) mom will be gone but you will still have a little of that love stored away in a bottle.

Since it's a homemade product and probably not pasteurized, it's going to have a shorter useable lifespan than commercial products. They have the process of making the sauce together. Many years down the line, John can make hot sauce with his own kids or grandkids, and remember those times with Mama Green while making new memories for the next generation. When you think about it, that's the true magic of having an "old family recipe."

I highly recommend a book called "The $64 Tomato". The author talks about his experience trying to grow heirloom tomatoes himself because they are so expensive in the store and it backfires exceptionally.

regardless, food safety laws make online sale of independent food products inadvisable. Cottage food laws allow very low-risk foodstuffs to be sold at a certain scale from non-commercial kitchens but I doooon't think hot sauce is one of those things. Also he'd be limited to people who could buy it within the state of indiana and pick it up in person, i'm pretty sure. cottage food laws are supposed to allow you to have a bake sale, not for a youtuber to sell their weird sauces

To make things a teeny less time consuming in years to come, you can get fermentation specific lids that use an airlock to let the gasses out without having to burp regularly. Between doing that and swirling a bit occasionally to keep the fruit cap moist, it should drastically reduce mold worries.

You can ferment whole peppers in 3% brine with some parchment paper or a stone / fermentation weight and reduce the concern to like 0!!

I love all of your adventures in gardening videos, and I love how frank you are about the cost of gardening - I love me some of the chiller homesteading youtube channels I watch, but they really undersell the price of garden upkeep when trying to claim they save money by gardening. It is a way to have nicer-tasting produce and a hobby that helps your mental health at a modest cost if you are careful with your methodology, not a money saving tip

This is a good reminder. I'm getting very caught up in video games (bg3) but also my direct care worker and I made soup two days ago which my dad took to my sister's house. It's very different to be building something in Minecraft vs. experiencing the story in Baulder's Gate vs. making something in real life is so intensely real and tangible in comparison. I wouldn't want to give up my games, but I'm so grateful to have a much, much better balance and to be able to do so many things that I just couldn't before I got help.

I love the honesty here, lol. I was expecting this to be like a failed outside garden attempt, but the moment I saw that light rack I was like oh man, he's not kidding, lol. I completely agree with the use of this as a Sainity aid. I volunteer every weekend at a community garden for this reason and also because all the trees were dying from diseases and I know how to treat those so now I'm the tree person!

if you want a fun idea for future hot sauces, put a bit of fruit in the jars for the ferment. we’ve liked pineapple and peaches in the past, and frozen works perfectly!

I needed it today after shelling out a couple hundred bucks I really didn't have to spare, to replace my windshield after some of my neighbors had an insomnia-o'-clock screaming, throwing-things argument last night outside our building just in front of where my car was perfectly placed in a parking spot (as I found out later) to have my windshield helpfully catch what one of them "dropped".

I haven't been able to grow peppers recently, but when I was going through some tough times a few years ago, this was my thing. A few tips: weigh the peppers and salt. Just get a scale that measures down to the tenth of a gram. Keep everything clean. Get an air lock lid, and an air lock. Burping the lids can get away from you if you're not able to easily acquire new habits. Vinegar is a strong flavor and carries a strong odor. Citric acid (available in the canning area of your local grocer) and water (I like 8 grams citric acid powder per liter of clean water) is a great alternative. If you make a brine ferment instead of mash, you can use the lactic acid already present. Don't stick your finger in something you're going to put on a shelf (or give to someone to put on a shelf) which will be consumed much later. It's probably fine, but still kinda gross. Don't think about the cost. It's high.

You should try growing peppers my way. It's mostly the same steps but at the end you only get a few peppers and they don't taste good. Very rewarding and I can't wait to do it again next year.

As an old hand with lactofermentation (the kind you're doing) you can reduce the "no whammy" issue by using an inoculation from another lactoferment. Just 10-20ml per jar of the water from a previous successful ferment will jumpstart it, and allow it to push out the oxygen (which the mold needs) much more quickly. A single-jar batch of lacto-pickled carrots or something made a week ahead of time would give you more than enough liquid! Also, I highly recommend mason jar "pickle pipes". Basically a little silicon widget that replaces the metal insert in the lid. Positive pressure auto-releases the gas without letting anything in. A balloon gently stretched over the mouth with a pinprick in it will also do the trick.

I liked growing peppers inside last year. I did bell peppers, pointed bell peppers, spanish peppers, and jalapeno peppers. Harvested quite a lot from just seeds I got from these peppers as I bought them in the store. It was a hastle with very frequently watering a lot, the aphids, and the caterpillars. But it was fun and I learned a lot about taking care of plants. Next year I'm doing it again probably.

I just wanted to say that I would fully support your weekly segments consisting solely of “Cooking with John” bits interspersed with tuberculosis facts and the occasional Awesome Socks/Coffee Club plug… if you so choose. You wouldn't even need to really cook, you could simply drop random objects into a pot of boiling salted water whilst regaling us all with your unique insights into *gestures broadly* and it would undoubtedly be endlessly fascinating.

We plant hot peppers because 1 x a year, my son takes salsa to work. 1 time a year we make the hottest salsa known to man. Scotch bonnets thai chilis jalapanos and many more are chopped up with onions and tomatos for a burn feast. Each man from his work offers up a salsa. They each grab a chip and dip into the firey malange. Tasting each one. They do this on a friday, so they have a weekend to get past all side effects from eating fire. So that is why we grow peppers and buy disposable gloves.

When I ferment things, I like to do it in a swing-top jar (the kind with the little metal latch) closed up with a hair tie or a rubber band. It'll be tight enough to keep bugs out, but have enough give to let fermentation gas out on its own. Plus, with a glass lid, it's easy to see if mold is growing : )

Clarification: hot sauce is a shelf-stable product covered by Indiana cottage food laws. You can sell it if you want to. You wouldn't be able to make it profitable, but you could clean out some inventory and make enough for more bottles. :)
