RICOTTA AND SPINACH RAVIOLI
In this recipe, I’ll show you how to knead and roll out the dough by hand to create one of the classic dishes of Italian cuisine: Ravioli! This is a typical fresh egg pasta with a filling. Today, I’m using ricotta and spinach, but it can be filled in countless other ways!

Ingredients: for 5-6 people
300 g All-purpose flour (Type 0)
3 Eggs
For the filling:
300 g Spinach (cooked and squeezed)
300 g Ricotta
2 tablespoons Grated Parmesan cheese
